Whole Wheat Pineapple-Carrot Wedding cake Waffles with Maple Cream Cheese Glaze + my visit to Traverse City, Michigan
In regards to a month ago, I attended #SharingbytheShore, an intimate food blogger retreat held in Traverse City, Michigan. Within the last year, I’ve been to a few blogging retreats and constantly had a confident experience; this trip was no different.
You might be wondering why food bloggers have retreats. Well, it gives us the opportunity to connect, learn more about each other on a far more personal level, giggle, eat, and share our blogging abilities/experiences. Every one has a different work style, cause they blog page and what they’re passionate about. Like any various other industry, it is important to gather and study from one another (similar like you would at a conference).
The very first night we stayed in and cooked fajitas. Brandy manned the grill and made a combo of chicken, steak and portabella mushroom (supplied by Door to Door Organics ).
I wish she could come cook for me personally every night from the week because not only were the fajitas magical, but she’s thus very sweet and hilarious. (We also made snapchat performing videos together!)
Another evening we stopped around to check out some great visit Cherry Republic in Traverse City. Seriously it had been amazing! There is cherry wines, cherry pizza, cherry candies, cherry tortilla potato chips, cherry EVERYTHING. I also bought some spicy cherry BBQ sauce for Tony’s parents!
On top of that, Traverse Town is most on the drinking water. You can type of view it in the backdrop of this picture.

We also ate at Aerie in Traverse Town, which was fabulous. I loved roasted chicken, dark chocolate sorbet and this delicious looking beverage.
We really did have the optimum time together.
ALSO! I nearly forgot to mention that we experienced a waffle club among the mornings filled up with fresh fruit, yogurt and crispy golden waffles. I haven’t ended thinking about those waffles since, and certainly I needed to crush that craving. So… I present you whole wheat waffles, however, not just any whole wheat grains waffle – types that are jazzed up with carrot cake and pineapple flavors.
Plus don’t forget about a simple MAPLE CREAM Parmesan cheese GLAZE. Not endeavoring to shout at you, but just seriously worked up about how much it requires these waffles outrageous.
You will need to absolutely make these waffles ASAP. I upped the protein within the recipe by using a low-fat ordinary Kefir (filled with probiotics) nevertheless, you could sub buttermilk if you want. Sometimes I add 1/2 cup of zucchini towards the batter too – but no more!
Best of all? These are fridge friendly. Yep, you can make the waffles forward after that pop them within the toaster when you have a significant waffle craving.

2 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/4 teaspoon salt
1 1/2 cups finely shredded carrots
2 tablespoons 100% genuine maple syrup
2 tablespoons melted and cooled coconut essential oil (may also use melted butter)
1 teaspoon vanilla extract
2 eggs, slightly beaten
4 oz low fat cream mozzarella cheese, at room temperature
1/4 cup 100% genuine maple syrup
Preheat Belgian waffle iron.
In a big bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger and sodium.
In another large bowl, stir together carrots, maple syrup, coconut oil, vanilla and eggs until well combined. Gradually mix in Kefir. Add wet ingredients to dried out ingredients and combine until just combined. Slowly fold in pineapple (and nuts/raisins, if you are using).
Spray waffle iron generously with nonstick cooking spray after that about 1 glass of the batter in to the iron and spread out a bit to the edges. Cook waffles based on the manufacturers instructions.
While waffles cook, in a little saucepan, add maple syrup and cream parmesan cheese and place over low warmth; stirring until it becomes simple and creamy.
