Whole Wheat Pineapple-Carrot Cake Waffles with Maple Cream Mozzarella cheese Glaze + my trip to Traverse City, Michigan
In regards to a month ago, I attended #SharingbytheShore, an intimate food blogger retreat held in Traverse City, Michigan. Within the last year, I’ve been to a few blogging retreats and generally had a positive experience; this trip was no different.
You might be wondering why food bloggers have retreats. Well, it offers us the opportunity to connect, find out about one another on a more personal level, have fun, eat, and talk about our blogging abilities/experiences. Every one includes a different work style, cause they blog page and what they’re interested in. Like any other industry, it’s important to get together and study from each other (similar as if you would at a conference).
The first night we stayed in and cooked fajitas. Brandy manned the barbeque grill and made a combo of poultry, steak and portabella mushroom (supplied by Door to Door Organics ).
I desire she could come cook for me personally every night from the week because not merely were the fajitas magical, but she’s thus very special and hilarious. (We even made snapchat performing videos jointly!)
Another evening we stopped in town to look at some great visit Cherry Republic in Traverse City. Significantly it had been amazing! There is cherry wine, cherry pizza, cherry candies, cherry tortilla potato chips, cherry EVERYTHING. I also bought some spicy cherry BBQ sauce for Tony’s parents!
On top of that, Traverse City is every on the drinking water. You can kind of see it in the background of this picture.
Here is a picture from the blue parmesan cheese cherry fig bacon pizza from Cherry Republic. This insanely delicious mixture that I might have to ensure it is again.
We also ate at Aerie in Traverse Town, that was fabulous. I loved roasted chicken, chocolates sorbet which delicious looking beverage.
We really did have the best time together.
ALSO! I almost forgot to mention that we got a waffle club among the mornings filled with fresh fruit, yogurt and crispy fantastic waffles. I haven’t stopped dreaming about those waffles since, and certainly I needed to crush that craving. Therefore… I present you whole wheat waffles, but not just any whole wheat grains waffle – types which are jazzed up with carrot wedding cake and pineapple tastes.
Plus don’t forget about a simple MAPLE CREAM Mozzarella cheese GLAZE. Not looking to shout at you, but just seriously worked up about how much it takes these waffles over the top.
You will need to absolutely make these waffles ASAP. I upped the protein within the recipe with a low-fat plain Kefir (filled with probiotics) but you could sub buttermilk if you’d like. Sometimes I add in 1/2 glass of zucchini to the batter too – but no more!
On top of that? These are fridge friendly. Yep, you may make the waffles ahead then pop them in the toaster when you yourself have a serious waffle craving.
Body fat: 7.1g
2 1/2 teaspoons cooking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/4 teaspoon salt
1 1/2 cups finely shredded carrots
2 tablespoons 100% 100 % pure maple syrup
2 tablespoons melted and cooled coconut essential oil (can also use melted butter)
1 teaspoon vanilla extract
2 eggs, slightly beaten
4 oz reduced fat cream parmesan cheese, at area temperature
1/4 cup 100% 100 % pure maple syrup
Preheat Belgian waffle iron.
In a big bowl, whisk together flour, baking natural powder, cinnamon, nutmeg, ginger and salt.
In another large bowl, stir collectively carrots, maple syrup, coconut oil, vanilla and eggs until well combined. Gradually stir in Kefir. Add damp ingredients to dry ingredients and combine until just mixed. Slowly collapse in pineapple (and nut products/raisins, if you work with).
Spray waffle iron generously with nonstick cooking spray after that about 1 cup of the batter into the iron and spread out a little to the edges. Cook waffles according to the manufacturers instructions.
While waffles cook, in a little saucepan, add maple syrup pigs and feet cream mozzarella cheese and place over low high temperature; stirring until it becomes smooth and creamy. Once waffles are done cooking, serve using a drizzle of the maple cream cheese glaze. Makes 3 huge belgian waffles, 6 portions total (1/2 belgian waffle each).
Nutrition does not are the pecans, raisins or the maple syrup glaze (all optional).

If you want, you can sub 1/2 cup of carrots for 1/2 glass of zucchini – it’s great tasting!
