Whole Wheat Chocolate Chip Oatmeal Cookies with Salted Day Caramel
Ohhhh hiiii. It’s been a whirlwind past few weeks due to moving. Personally i think terrible because I haven’t had the opportunity to give your blog and composing the think it’s great most definitely deserves.
For now, there’s cookies though. And cookies are constantly the solution when you don’t even know the actual question is. Especially cookies packed with chocolates, oats, coconut flavor along with a SALTED DATE CARAMEL. Holy love of my life.
I seriously could not stop eating these amazing, chewy beauties. They’re full of much better substances like coconut essential oil, whole wheat grains, oats, coconut glucose and that chocolates we all know and love. I’m not saying these are healthy, but I am saying that they actually provide a few natural, nutritious ingredients.
Also, everything chocolates = antioxidants. Might as well believe that.
Maybe with some PB too? I mean, obviously.
Calories from fat: 200
1/2 cup organic brownish sugar
1/4 cup coconut sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 egg, at area temperature
3/4 cup whole wheat pastry flour or white whole wheat grains
1 cup rolled oats
1/2 teaspoon baking soda
1/4 teaspoon salt
6 oz your favorite dark chocolate bar (a minimum of 72% cacao), coarsely chopped
For the salted date caramel
8 Medjool times, pitted
1/2 cup unsweetened vanilla almond milk, plus much more if necessary
1/2 teaspoon vanilla extract
Preheat oven to 350 levels F.
In a moderate bowl, beat jointly coconut oil, brown glucose, coconut sugar, vanilla, almond extract and egg until well combined and somewhat creamy.
In another medium bowl, whisk together flour, oats, baking soda and sodium. Add dry substances to wet substances, mixing until a dough forms. Collapse in chocolates chunks.
Roll cookies into 1-inches balls or work with a cookie scoop and put on a large baking sheet, roughly 2 inches aside. Bake for 9-12 mins or until sides are slightly golden brownish. Remove cookies from range and allow to cook on cooking sheet for a few minutes before transferring to a cable rack to finish cooling.
To help make the salted time caramel: Warm up almond dairy in a little saucepan until it’s almost as well hot to touch (but don’t boil it). Up coming place times, almond dairy, vanilla and sodium in the blender and pulse/blend until smooth. You may need to add even more almond milk if it’s too thick to mix. Use your very best judgement. Try not really too add too much almond dairy because you don’t want it soupy, but rather on the thick side.
Once your caramel is prepared, you can stick it in a small plastic material ziploc bag and zip it shut. Press the caramel towards one bottom level corner from the bag and snip away a tiny corner having a scissors (Congrats, you just produced a DIY pastry bag!). Finally, squeeze caramel over each cookie. You almost certainly won’t use all of the caramel, so feel absolve to store it within the fridge for a week. It’s wonderful on toast, in oatmeal or essentially on whatever needs a small sweetener, like your coffee. Makes about 14 mid-sized cookies. Feel absolve to double the recipe!
If you’d like thicker cookies, add a couple of tablespoons more of oats.
It’s important that your egg be at room temperatures otherwise it could seize in the coconut oil. Try taking the egg out of the fridge and putting it at space temp. for approximately 30 minutes before you will be ready to start making the cookies.
Feel absolve to sub 1 cup chocolate chips for the delicious chocolate chunks.

Reduce the sugar (and save calories) with this recipe through the use of only 3oz of chocolates (or about 1/2 cup of chocolate chips). You can also try using raisins!

I usually make my cookies wheat-free as my partner isn’t very good with wheat and I generally tend in order to avoid it myself, so will attempt with an almond flour and sorghum blend! X
