Unfortunately her wallet was stolen while we were out shopping. Tis the season for thieving? Ugh! A whole lot worse, she experienced some pretty essential documents within. But the good news is definitely that we got her back again on the aircraft secure (without an ID)! I guess the TSA knows more about you than you imagine.
Now I’m ready to get back on track regarding taking in, working out and work. I haven’t exercised in a week because I’ve been fighting a serious chest disease (or so I believe). I can’t really sleep at night because my cough maintains me up. No matter just how much ZzzQuil I chug, it’s still there. I believe I might possess a NyQuil hangover; is the fact that possible?
Speaking of working out and eating best, how are you supporting on sticking to your targets? I never understand on waiting around until January to make a resolution or to get on track. Why not start RIGHT NOW? Yes, I recognize there are holiday cookies EVERYWHERE which can be awfully tempting. Rather than indulging in a single from those pushy coworkers, think about we replace a number of the cookie indulgences with a wholesome granola bar rather? Yes, yes, yes.
These granola bars were created in partnership with my friends at Ancient Harvest My pantry is stocked with Ancient Harvest quinoa because I use it a minimum of three times a week. This time, I wanted to do something a little different and exclusive: quinoa IN granola bars. And yes, it’s uncooked – or rather, toasted within the oven with the oats. Therefore you obtain crunchiness and chewiness, something that most granola pubs out there absence.
The base from the granola bars are made up of quinoa, oats, peanut butter, honey, chia, vanilla and a touch of coconut oil. That’s it! I really like they are wholesome, basic and modifiable. What’s great about these pubs is that they offer over 3g of dietary fiber and almost 7g of organic protein. Of course, if you are like me, you probably will enjoy tossing in several chocolate chips or dried cranberries.
Since these bars are essentially no bake, they’ll stay chewy and fresh for long after you make them. It is possible to store them covered tightly in the refrigerator for weeks and get them whenever you’re in need of one. Enjoy! xo.

I love these granola pubs! I have attempted cooked quinoa in granola bars before but I have found that the granola bar is quite moist even after cooking. Toasting the quinoa seems like a great alternative!
Have you got any ideas for replacing the peanut butter? Just wondering how I could make them college friendly once we are not allowed nut products of any kind at school.
p.s. I’ve a easy granola pub recipe that I use often for college snacks – the kids like them ( -pubs/ )
