This Summer has been filled with margaritas, travel, baseball, therefore MUCH FOOD. I’ve sensed therefore blessed to be able to take so many weekend trips among my long function weeks. The photos below capture some of the occasions of a few journeys to Miami, North & South Carolina.

I LOVE margaritas. They are hands down the best drink and what better spot to appreciate them then beautiful, sunny Miami?! I used to be in Miami for a vacation to the BlogHer food conference wayyy back May. Our air travel was in fact diverted to Fort Myers for a few hours to due a tornado AT THE MIAMI AIRPORT.
Every thing turned out to be fine, but we were continued the runway for hours! I remember departing Minneapolis around 10am rather than arriving in Miami until 9pm. Therefore, a margarita was required.
Next up! THE MEALS. Miami is known for their amazing food and I was not disappointed. I took complete advantage of enjoying everything Hispanic inspired including big dishes of guac, plantain potato chips, and AMAZING RICE.
Surprisingly I exercised everyday within my trip. The downtown Hilton Miami had a nice workout middle and we strolled nearly just about everywhere we went, too!
This was just a little appetizer selection from a celebration with Stitch Repair ! We munched on mushroom bruschetta, wine, parmesan cheese, and amazing bacon covered fig. AGAIN, so much food.
Right here was the view from my hotel room. It was super humid outside, but everything I loved.
Meet my eating partner in crime, Maegan ! We literally ate everything we’re able to in Miami, ordering a bit at every bakery and restaurant we went.
One evening we decided to walk from downtown to South Beach to eat dinner at one of Jose Andres’ restaurants. I believe it was approximately three miles and a bit frightening, but we needed the exercise! I mean just take a look at what we were eating…
Sticky buns. Coconut Cake Shakes. Cookies.
I think my favorite was probably the coconut cake shake. It had been unquestionably delicious and I loved the raspberry that came with it.
Then there were these AMAZING cookies that Meagan simply had to get and undoubtedly, I needed to take a handful of bites.
The main one with coconut, pecans and delicious chocolate was absolutely fabulous. But I actually had to stop after two bites. I simply couldn’t eat any more.
After a few fun days in Miami, I jetsetted to North Carolina for a short weekend with Tony.
Better still than all of the food on earth.
I love being able to see him pitch. It in fact keeps me interested in baseball. He in fact got moved up to new team this week, which is extremely thrilling! I’m so pleased with him.
Of course after a short trip to see him, it’s back on another flight within the wee hours of Monday morning hours so I can get back to my regular work.
I wasn’t back Minneapolis for too much longer before I had developed another trip planned back again. Tony and I planned a trip to Myrtle Seaside, SC. I had under no circumstances been to SC, but I used to be SO thrilled to lay within the beach and just relax.
Ps. if you’re ever on the Minneapolis airport terminal, eat at French Meadow! Their organic breakfasts are perfect.
Tony picked me personally up in the Charlotte airport terminal and we drove roughly three hours to Myrtle Seaside. We stayed at a hotel near Broadway, a place where all the nightlife was. It was a good 20 minute walk towards the beach, but I love walking so I didn’t mind.
After we arrived, it was glorious. The beach was beautiful with soft, warm sand and a salty ocean air flow.
Precisely what I needed.
We spent most of our times enjoying cocktails and going swimming. Myrtle Beach actually does not have that great of meals, therefore i wasn’t that impressed with any of the restaurants. We just were happy to have the ability to forget about baseball and work for a little bit. Sometimes you just need a small travel to reveal, you know?
At night, we went out with one of Tony’s teammates who also been in Myrtle Beach along with his girlfriend. Every night we remained out late and danced the night away.
If you’re in Myrtle Beach, you might browse the ferris wheel overlooking the ocean. I didn’t get yourself a chance to accomplish it, but think it would have been fun!
I wish I used to be back in that ideal weather at this time.
After our trip to Myrtle, we drove back again to NEW YORK where I proceeded to BAKE ALL OF THE COOKIES. Because that’s precisely what I do.
I also got to see Tony pitch on the 4th of July.
And watched him eat way too much food.
We planned a date evening in because we were sick of extra cash and because we like cooking together; it’s fun to flavor test, drink wine and disagree on what things should be made.
I really wanted to help to make The Pioneer Woman’s Baked Ziti , but with a healthy makeover. I actually think it’s one of the best italian foods I’ve available myself and highly recommend it.
Here is it going into the oven. I’ve no idea why my muscle groups look therefore jacked, but I’ll take it.
The finished dish was amazing. We combined it using a side salad and garlic bread. I sensed good about operating 5 kilometers that day.
Cause the next day I ate two of these cookies AND THEY WERE GLORIOUS.
Then I got back on another plane to Minneapolis.
