We had been considering breakfast time enchiladas for quite sometime. Similar to fantasizing about them every night. Anyway I decided to wrap the traditional huevos rancheros breakfast (eggs + beans) into tortillas and fill them with delicious business (also called reddish colored sauce and avocados).
I’m really pleased with that decision because I now want to consume these everyday for the rest of my entire life. And I can do that because they only have about 230 calories per enchilada. Yes!
Let me break it down for you personally.
Whole wheat tortillas (because we’re healthy wholegrain eating people, duh).
Fluffy scrambled eggs (with mostly protein packed egg whites).
Refried dark beans.
Low fat cheeeeeese.

We combine the items I dream of into the tortillas. Drizzle with LOTS of reddish sauce, and move them up tight. Time to pop in the oven and get ready for a tastebud party in less than 30 minutes.
Skinny Huevos Rancheros Breakfast Enchiladas
6 whole wheat tortillas (I love low carb, or you might use corn tortillas to create these gluten-free.)
2 whole eggs + 6 egg whites
1 may (16 oz) great crimson enchilada sauce
1 may (16 oz) refried dark beans
1/2 red bell pepper, diced
1/2 cup cilantro, chopped
3/4 cup low-fat cheese (I love colby jack or mexican)
Pinch of salt
Preheat oven to 350 levels F. Combine refried coffee beans, diced reddish peppers, cilantro, and jalapeno collectively in a large bowl; set aside. In a moderate bowl beat your eggs jointly. Roll each tortilla up one by one and place seam aspect down within the baking dish. You will end up with 6 tortillas.
