Don’t act like you’re not intrigued with breakfast enchiladas. Psssstt… they’re healthful too! The guys who taste tested these for me personally even approved, buuuuttttt I’ve a sense Paula Deen wouldn’t normally. Sorry Paula, we’re saving our calories for margaritas.
Let’s not pretend with eachother for an instant. There is absolutely no pretending that people won’t run after down everything with alcohol consumption come Saturday. Margaritas with breakfast time? You will want to? it’s Cinco de Mayo and I enjoy pretend I’m Mexican! Come on, we realize how this holiday works… and exactly how unpleasant Sunday is going to be.
Forget about hangovers. Concentrate on a breakfast time that gets you ready for each day full of delicious potato chips and guac. Since Cinco de Mayo is actually this Sunday (and because I favor a week filled with celebrations), I thought I’d share this along with you just a little early.
We had been considering breakfast time enchiladas for quite sometime. Similar to dreaming about them every evening. Anyway I made a decision to wrap the original huevos rancheros breakfast time (eggs + beans) into tortillas and insert them with delicious business (also known as crimson sauce and avocados).
I’m really happy with that decision because We now want to consume these everyday for the rest of my life. And I could do that because they just have about 230 calorie consumption per enchilada. Yes!
Let me break it down for you personally.
Whole wheat grains tortillas (because we’re healthful whole grain eating people, duh).
Fluffy scrambled eggs (with mainly protein packed egg whites).
Refried black beans.
Low fat cheeeeeese.
Uhhhh may i just tell you that basically these enchiladas are produced from the very best stuff on earth?

We combine the things I dream of in to the tortillas. Drizzle with Plenty of reddish colored sauce, and move them up tight. Time to pop in the oven and incomparable a tastebud party in less than 30 minutes.
Skinny Huevos Rancheros Breakfast Enchiladas
6 whole wheat tortillas (I like low carbohydrate, or you might use corn tortillas to make these gluten-free.)
2 whole eggs + 6 egg whites

1 can (16 oz) refried dark beans
1/2 reddish colored bell pepper, diced
1/2 cup cilantro, chopped
3/4 cup low-fat cheese (I love colby jack or mexican)

Preheat oven to 350 degrees F. Combine refried beans, diced reddish peppers, cilantro, and jalapeno collectively in a large bowl; set aside. In a medium bowl beat your eggs jointly. Coat large skillet with non stick cooking spray and add your eggs.
