So I’m performing a juice & food cleanse right now. I’m SUPER excited about it because as you know I freakin’ like doing them. It’s not that I believe they’re great in as soon as, it’s just that I really appreciate how I feel afterwards. The huge benefits? How obvious my skin looks, how much great rest I get and exactly how in different ways I find yourself thinking about food.
I’ll have updates for you for the cleanse shortly; for the time being I’ve been staring at these bars on the counter all of last night. I produced them the other day for Tony because he’s all like I have to get in shape for baseball time of year – that is as he continues to consume chocolate covered doughnuts for breakfast time. I think he could eat just about anything and still look good. No joke.
Anyway these pubs are everything I’ve wanted to make for a very long time. My granola bar obsession peaked when my friend Maegan and I traveled around Kansas Town We had the most incredible coconut granola pub at Kaldi’s espresso and ever since then I’ve been dying to make my own.
The beautiful part about granola bars is that you can essentially add anything to them that you’d like. This one is fairly simple. The bottom comprises of oats, honey and a nut butter. The others? Up to you! You can basically sub any kind of nut for the cashews and whatever kind of dried fruit you would like for the cranberries. Individually, I think cherries would be fantastic. Or if you wish to come on delicious, add some mini chocolate potato chips. GOD THAT Noises GOOD. EVERYTHING SOUNDS SO GOOD.
Sorry about this caps. Did I talk about I’m writing this late at night and dreaming about my usual late night snack of peanut butter, banana and chocolates chips? Also, remember the juice/food cleanse. Forgive me for just about any spelling errors. I really like you.

3/4 cup unsweetened coconut flakes
1 cup unsalted cashew halves
1 tablespoon chia seed products (optional)
1/2 cup dried out cranberries, coarsely chopped
1/2 glass honey (dark brown rice syrup if vegan)
1/2 cup unsalted creamy almond butter
2 teaspoons coconut oil
Collection a 9-inches square skillet with parchment paper. In a big dish combine oats, cashews, coconut, chia seeds and dried out cranberries.
Place moderate saucepan over medium low heat and add in honey, almond butter, coconut essential oil, sodium, cinnamon, and vanilla; stir until warm and coconut oil is definitely melted with almond butter. Add damp ingredients to dry ingredients and stir well to combine and coat the oat/cashew/coconut mixture. Transfer mixture to prepared skillet and press firmly down to pack pubs firmly and ensure they stick together. The harder you press, the more they will stay together – therefore press them in extremely firmly!
Place pan in fridge for 1-2 hours or until company. If you want to speed up the procedure, place the pan in the fridge for ten minutes. Cut into 16 bars. Bars could keep at room temperature for a week, or longer in the fridge. I like to separately wrap my bars in plastic cover for grab and go snacks during the week – or maintain a few in my own car for post workout routines.
You can even bake these if you like crunchy pubs: Bake for 10-15 minutes or until firm then remove from oven and keep at area temperature to cool. Don’t bake longer or they will become very difficult.
Feel absolve to sub another nut rather than cashews and make use of any type of nut butter you’d like in place of the almond butter. These granola pubs are very flexible! Try dried cherries or apricots instead of cranberries!

If I’d replace the almond butter with peanut butter, am i going to need to replace the coconut flakes as well? Can peanut and coconut coexist in the same formula? What do you suggest?
I actually replaced the cranberries with raisins and can use less honey next time as the bars were too special for a snack or breakfast.
Very filling and great tasting though.
