I’ll have updates for you within the cleanse quickly; for the time being I’ve been looking at these pubs in the counter all of last night. I made them the other day for Tony because he’s all like I need to get a lean body for baseball period – this is as he continues to consume chocolate covered doughnuts for breakfast time. I believe he could consume just about anything and still appear good. No joke.

Anyway these pubs are everything I’ve wanted to make for a very long time. My granola pub obsession peaked when my friend Maegan and I journeyed around Kansas Town We had probably the most incredible coconut granola pub at Kaldi’s coffee and ever since then I am dying to make my own.

The beautiful part about granola bars is that you can essentially add anything to them that you would like. This one is fairly simple. The base is made up of oats, honey and a nut butter. The rest? Up to you! You can fundamentally sub any kind of nut for the cashews and whatever kind of dried out fruit you’d like for the cranberries. Personally, I think cherries will be fabulous. Or if you want to get real delicious, add some mini chocolate chips. GOD THAT SOUNDS GOOD. EVERYTHING SOUNDS SO EXCELLENT.

Sorry about this caps. Did I talk about I’m writing this late during the night and fantasizing about my typical midnight snack of peanut butter, banana and chocolates chips? Also, remember the juice/food cleanse. Forgive me for just about any spelling errors. I love you.

Ingredients

3/4 cup unsweetened coconut flakes

1 cup unsalted cashew halves

1 tablespoon chia seeds (optional)

1/2 cup dried out cranberries, coarsely chopped

1/2 glass honey (brownish grain syrup if vegan)

1/2 cup unsalted creamy almond butter

2 teaspoons coconut oil

Instructions

Line a 9-inch square skillet with parchment paper. In a large dish combine oats, cashews, coconut, chia seeds and dried cranberries.

Place medium saucepan over medium low high temperature and add honey, almond butter, coconut oil, salt, cinnamon, and vanilla; stir until warm and coconut essential oil is certainly melted with almond butter. Add wet ingredients to dried out ingredients and stir well to combine and coat the oat/cashew/coconut mix. Transfer mixture to prepared pan and press firmly right down to pack bars firmly and ensure they stay collectively. The harder you press, the greater they will stay together – therefore press them in very firmly!

Place skillet in fridge for 1-2 hours or until company. If you want to speed up the process, place the pan in the fridge for ten minutes. Cut into 16 bars. Bars will keep at area temperature for weekly, or longer within the fridge. I like to individually wrap my bars in plastic wrap for grab and go snacks through the week – or maintain a few in my car for post workouts.

You can even bake these if you like crunchy bars: Bake for 10-15 mins or until firm then remove from range and keep at space temperature to cool. Don’t bake longer or they will become very hard.

Feel free to sub another nut instead of cashews and use any type of nut butter you’d like instead of the almond butter. These granola bars are very adaptable! Try dried cherries or apricots instead of cranberries!

Hi Monique

If I’d replace the almond butter with peanut butter, will I have to replace the coconut flakes aswell? Can peanut and coconut coexist in the same formula? What would you suggest?

We replaced the cranberries with raisins and will use less honey the next time as the bars were too sweet for a snack or breakfast.

Extremely filling and mouth watering though.
