Pepper Jack Stuffed Turkey Zucchini Meats Loaf with Awesome Sauce

Zucchini, zucchini, ZUCCHINI. It’s taking over my entire life. I’m uncertain I mind so much, but I can let you know that I’m getting fed up with shredding the zucchini. I have a few more to consume but from then on I don’t think you will see another zucchini recipe from me in quite sometime. My ideal arm bodily hurts from zucchini shredding symptoms. Yes, it’s officially a symptoms (within the AK book anyway).
I realize I am doing various baked goods with zucchini so this time I wanted to enable you to get something just a little savory like this turkey zucchini meatloaf. I determined that adding some zucchini to some turkey meatloaf wouldn’t normally only be considered a great way to obtain my vegetables in, but additionally to add dampness (since I use lean turkey).

I’m an enormous lover of ketchup (as in I place that sht on everything and I don’t purchase Heinz), nevertheless, you can easily make delicious EASY homemade amazing meatloaf sauce yourself. Trust in the power of this recipe.

LOW CARBOHYDRATE Pepper Jack Stuffed Turkey Zucchini Meat Loaf

Ingredients
1 cup finely diced white onion
1 cup shredded zucchini, squeezed of excessive moisture with a paper towel
2 cloves garlic, minced
1 egg, slightly beaten
1/2 cup italian style panko breadcrumbs (may use GF breadcrumbs)
2 tablespoons organic ketchup
1 teaspoon dijon mustard
1/2 teaspoon sea salt
For the topping:
1/2 tablespoon honey
1 tablespoon mustard
dash of hot sauce
Instructions
Preheat oven to 375 degrees F. Line huge cooking sheet with foil and spray with nonstick cooking food spray.
In a big bowl combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and salt and pepper. Use the hands or a large spoon to mix until well combined. I find that it’s much easier to mix the ingredients if you use your hands.
Place half of meat mixture about foil-lined skillet and shape right into a 10×4 inch rectangle. Top with pepper jack evenly, leaving about an 1/2 inches of room in the sides. Top with the remaining meat combination, enclosing the mozzarella cheese completely and sealing the side together.
In a small bowl, whisk together tomato sauce, apple cider vinegar, honey, mustard, soy sauce and hot sauce if desired. Pass on half of the awesome sauce on top of the meats loaf, reserve other half for when meatloaf is completed baking.
Bake meatloaf for 45 moments to 1 1 hour or until meat thermometer reads 160 levels F. Top with remaining sauce and invite to cool for 10 minutes before reducing into 6 pieces.
I actually made this yesterday evening for my husband, who was extremely skeptical of this formula and stated can’t we just have regular meatloaf?”. I took it out of the oven and before I could even snap a picture he was digging in! He ate 3 huge slices and desires me to create it again next week!
