OH BABY. I produced a grilled cheese because HELLO… it’s grilled mozzarella cheese month!
In the event that you haven’t noticed, I must say i don’t focus on food vacations that much. Or holidays in general. I simply kind of make what comes to mind (and seasonal!) then hope it fits into your supper or dessert program. But grilled mozzarella cheese? Come on you understand I can become on top of my game with this shit.
Here’s how it goes: I’m strolling through Investor J’s with my fancy small crimson cart, headphones in my ears and sampling some delicious dip of your day. Plus coffee! Oooo do they have some good coffee or what? Anyway out of the corner of my eye I spot strawberries for sale. Two pounds at under $5? Yes!
Then I glance over and notice perfectly perfect avocados. Those get into my container and into my tummy (must wait around until I get home because certainly need a knife to cut those things open up). I also found this delicious crusty seedy sourdough breads and that gets tossed in the basket like I’m JORDAN.
Or not really. I really just put in my container quite nicely. Let’s be honest I’ve no actual sport skills besides rugby and in Tony’s opinion that’s still questionable.
Whatever let’s simply make grilled cheese, okay?
I hadn’t had grilled parmesan cheese in forever before We made that one. It’s usually not my head to sandwich but I had formed this outrageous avocado strawberry combo in my head and understood it needed to be examined out. After all obviously.
This recipe can be terrific because it’s lactose free! I actually used Move Veggie! Lactose and Soy Free of charge Mozzarella Slices alternatively. Have you tried them? They’re reduced fat (just 3g) and have zero cholesterol. Only a great alternative if you are looking for one! Oh and yes, they are doing in fact melt YIPPIE!
Next up… roasted strawberries! Please make these every day for the rest of your pigs feet shelf life starting NOW. They truly are nature’s chocolate. I like to roast them in a little coconut essential oil but you no longer need in this recipe, you’ll just work with a tablespoon of coconut oil to sweeten them up a little. The best part though? When the fruit combines with creamy, ripe avocado. ER MUHHHH GOODNESS after that you’ve got something excellent going. Plus Parmesan cheese?!

Ingredients
1 pint ripe strawberries, hulled and quartered (about 4 cups strawberries)
1 tablespoon coconut sugar
1 tablespoon essential olive oil
½ large ripe avocado, sliced
2-4 slices GO Veggie! Lactose Free Mozzarella Slices, depending on how cheesy you like things
Instructions
Preheat oven to 375 degrees F. Line a baking sheet with foil and lightly coat with non-stick cooking spray. In a moderate dish, toss strawberries with coconut sugars so that they are completely covered. Transfer to ready baking sheet and arrange in order that they aren’t congested. Bake for 20 minutes or until berries are juicy.
Heat a skillet over moderate high heat. Gently brush or drizzle half of essential olive oil over two slices of breads and place oiled side down in a skillet. Place mozzarella at the top then add avocado and roasted strawberries. Drizzle two pieces of bread with olive oil and place oiled aspect through to the sandwich. Cover with a lid and prepare about 4-5 moments or until fantastic brown on bottom. Carefully turn the sandwich, reduce heat to moderate and cook some more mins or before bread is fantastic brown. Enjoy immediately! Makes 2 sandwiches.
We used a multigrain breads with around 110 calories per slice. Shoot for a bread high in vitamins and minerals with no added sugar. You can also make this sandwich on an inside out english muffin!
To make gluten free: Work with a gluten free bread. You can find these at Entire Foods or Investor Joe’s.
