OH BABY. I made you a grilled mozzarella cheese because HELLO… it’s grilled mozzarella cheese month!
If you haven’t noticed, I must say i don’t focus on food holidays that much. Or vacations in general. I just kind of make what involves brain (and seasonal!) then hope it fits into your dinner or dessert strategy. But grilled mozzarella cheese? Come on you understand I can end up being on top of my game with that shit.
Here’s how it will go: I’m strolling through Trader J’s with my extravagant small crimson cart, headphones in my ears and sampling some delicious dip of the day. Plus espresso! Oooo do they have some good coffee or what? Anyhow out of the corner of my attention I spot strawberries for sale. Two pounds at under $5? Yes!
Then I glance more than and notice properly perfect avocados. Those get into my container and into my stomach (must wait around until I go back home because obviously need a blade to cut those ideas open). I also discovered this delicious crusty seedy sourdough bread and that gets tossed in the basket like I’m JORDAN.
Or not really. I actually just devote my container quite nicely. Let’s be honest I have no true sport skills besides tennis and in Tony’s opinion that’s still questionable.
Whatever let’s simply make grilled cheese, ok?
I hadn’t had grilled cheese in forever before We made that one. It’s not often my go to sandwich but I put this outrageous avocado strawberry combo in my own head and knew it needed to be tested out. I mean obviously.
This recipe is also terrific because it’s lactose free! I in fact used GO Veggie! Lactose and Soy Free Mozzarella Slices alternatively. Have you tried them? They’re reduced fat (just 3g) and have zero cholesterol. Just a wonderful alternative if you’re searching for one! Oh and yes, they actually in fact melt YIPPIE!
Next up… roasted strawberries! Make sure you make these every day for the others of your life starting NOW. They are nature’s chocolate. I like to roast them in a little coconut essential oil but you no longer need in this formula, you’ll just work with a tablespoon of coconut essential oil to sweeten them up a little. The best component though? When the fruit combines with creamy, ripe avocado. ER MUHHHH GOODNESS after that you’ve got something excellent going. Plus Parmesan cheese?!

1 pint ripe strawberries, hulled and quartered (about 4 cups strawberries)
1 tablespoon coconut sugar
1 tablespoon olive oil
½ huge ripe avocado, sliced
2-4 slices GO Veggie! Lactose Free Mozzarella Slices, based on how cheesy you prefer things
Preheat oven to 375 degrees F. Range a baking sheet with foil and lightly coat with nonstick cooking spray. In a moderate dish, toss strawberries with coconut sugar so that they are fully coated. Transfer to ready cooking sheet and arrange so that they aren’t crowded. Bake for 20 minutes or until berries are juicy.
Heat a skillet over medium high heat. Lightly clean or drizzle 1 / 2 of olive oil over two slices of bread and place oiled side down in a skillet. Lay mozzarella at the top after that add avocado and roasted strawberries. Drizzle two slices of breads with olive oil and place oiled part up on the sandwich. Cover using a cover and cook about 4-5 mins or until golden brown on bottom level. Carefully flip the sandwich, reduce heat to moderate and cook some more moments or before bread is golden brown. Enjoy instantly! Makes 2 sandwiches.
I used a multigrain bread with around 110 calorie consumption per slice. Shoot for a breads high in vitamins and minerals with no added sugar. You can even make this sandwich on an internal out british muffin!
To make gluten free: Use a gluten totally free bread. You can find these at Entire Foods or Investor Joe’s.
