I actually made these brownies on snapchat a couple weeks ago (username: ambitiouskitch) and saw that several of you ended up building them and tagging me on Insta. This is offering me some incentive to post even more Snapchat recipes and not simply movies of my cat drinking water out of a tea cup.
By the way, how was your weekend? Have you been freaking out because Sept is nearly right here? I am. It’s slowly getting a little bit cooler during the evenings and the sun seems to be placing eariler every day. I’m not really ready! Or possibly I am? Because Sept = everything pumpkin.
Yet I realize we aren’t there quite yet… thus today I present you with another zucchini formula! I’m uncertain if you’re excited or just ordinary annoyed at this time. I should possess called it zucchini month on Ambitious Kitchen because it’s basically experienced everything I’ve produced.
Now in the event that you haven’t tried zucchini in baked goods, this is a great formula to start with. Why? It’s easy, made in one dish, HEALTHY and freaking delicious.
We tested this recipe 5 times to attain the ideal consistency, consistency and perfect flavor. The trick would be to add a tiny bit of coconut essential oil to the batter to create these ooey-gooey perfection.
While these don’t necessarily taste like your typical buttery brownie, they are super moist and gooey, like all brownies should be. I would state they are even more of a combination between a cakey and fudgy brownie, but not at all dense.
As well as the raspberries really do add a lot here! I used a reduced sugars raspberry jam from Trader Joe’s and swirled it in, after that added raspberries at the top for a little pretty presentation (plus drizzled chocolates).
I do want to remember that I did test a batch of the brownies with fresh raspberries within the batter, but they came out too moist and nearly fell apart, so if you still want the raspberry taste I would recommend using jam.

Grain Free Raspberry Almond Butter Chocolate Chip Zucchini Brownies

1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon sodium (only if your almond butter isn’t salted)
1/2 cup delicious chocolate chips, divided
3 tablespoons low sugars raspberry jam
Raspberries for garnish, if desired
Preheat oven to 350 levels F. Grease 8×8 in . pan with non-stick cooking spray.
Press zucchini of surplus moisture with a paper towel.
In a large bowl, mix collectively zucchini, almond butter, egg, coconut oil, vanilla and maple syrup until steady in consistency. Add cocoa powder, baking soda and salt. Mix until just mixed. Mix in about 1/2 from the chocolate chips. Pour batter into prepared skillet. Spoon jam by teaspoonful onto the very best of the batter then take a blade and swirl the jam in to the batter several times.
Bake for 20-25 minutes or until toothpick inserted in to the middle happens almost clean. Remove brownies from range and transfer pan to a cable rack to awesome.
Place remaining delicious chocolate chips in a small saucepan over low heat. Mix chocolate until completely melted then drizzle over the top from the brownies. I love to also sprinkle mine with just a little ocean salt but it’s your decision. Cut into 16 brownies

I’ve a subsitution issue: it’s almost impossible to find almond butter in switzerland, the only real almond-based fat” available is in a very liquid type and fails well together with your quality recipes. Would it become possible to alternative with another nut butter, like peanut butter?
How much salt to add?
