My human brain is dependent on breakfast. For lunch and dinner. Actually, I could own it at every meal for the others of my life and be totally content.
In my opinion, there where is pig feet really absolutely nothing that beats an egg sandwich – specifically this egg sandwich. And although it’s as simple as it appears, it truly is the very best you will ever have.
Let me place it in this manner: Eggs + Avocado + Bacon + Tomato + just a little heating all on top of thick grainy toast = OMG! It creates me wish to cry each time I consume it, in a good way of course. Tears of real happiness. This egg sandwich is going to be the very best party your tastebuds will ever experience.

I get this to sandwich open-faced because I love eating it using a fork and blade and bathing in the incredible runny yolk. I like switching up my toppings as well!
The following are my go-tos:
1/2 a ripe avocado, chopped up or mashed
ripe, sliced tomatoes
red pepper flakes
crispy bacon – I take advantage of turkey bacon
good multi-grain bread for toasting – the thicker the better!
pepper jack, havarti, or goat mozzarella cheese – I like combining it up
good quality sizzling sauce
Various other favorites I’ve added:
spinach, arugula, or kale – more good-for-you greens!
green chile
red or green onion
chicken breast sausage, thinly sliced
jalapenos – if you want it hot!
Ingredients
1/2 a ripe avocado
1 slice of good multi-grain bread for toasting – the thicker the greater!
1 tomato, sliced
1 slice of high-quality pepper jack cheese
few dashes of popular sauce (I take advantage of cholula brand)
salt and freshly floor black pepper
Instructions
In a little bowl, add avocado and sprinkle with sodium and pepper, gently mash with a fork until it gets to a slightly chunky consistency. Add reddish colored pepper flakes if desired. Next toast breads to perfection, and spread smashed avocado over toast. Add the tomato vegetables and slice of cheese.
In a small skillet, cook bacon over moderate heat until crispy. Remove and transfer to paper towel and pat dried out. Keep temperature and split egg into skillet. Sprinkle with salt and pepper and cook until egg whites are set on the bottom yet yolk continues to be glossy, about 3 minutes roughly. Add the bacon to the toast and best with the deep-fried egg. The warm egg should melt the parmesan cheese a bit. Top with several dashes of scorching sauce, if preferred. Either increase another cut of toast and consume it just like a sandwich, or provide it open faced like I do and drill down along with a fork and knife. Enjoy!
