My day begins by waking up at 5:30am. I used to dread the first mornings but these days I find myself rather taking pleasure in peeling the addresses off, sleepily milling coffees and making a container, feeding the cat and moving out the door for my workout.
The schedule keeps me motivated and encourages me to visit bed at a decent hour (most of the time anyway). I’ve also discovered that I like having the rest of my time free to function without the expectation of exercising later on. Occasionally I really do sleep in until around 7am, but it’s getting more rare.
After I get home from my workouts, I crave my breakfast so it is easier to own it prepped then to make it. I’m not really resting when I state I start considering breakfast time before I go to bed. It’s my favorite meal of the day and I love switching it up with eggs, smoothies and undoubtedly, my beloved oatmeal.
Because Fall is slowly needs to creep onto our calendars, I needed to bring you my first pumpkin recipe of the season in partnership with my close friends at Better Oats ! I am hoping it’s not too early to shove all pumpkin-related things in that person, but if you’re anything like me, then you know it’s never prematurily . for pumpkin.
These pumpkin overnight oats were in the fridge waiting for me to devour after I got house from a sweaty, ass-kicking workout which included too many container jumps and squats for my liking. When I acquired in the entranceway I whipped open the fridge, topped the pumpkin immediately oats with toasted pecans, provided it a good mix, and dug in! Whoa, this likes just like a cut of heavenly creamy pumpkin pie. For breakfast!
A little concerning this recipe:
Organic Better Oats : I used Organic Old Fashioned Better Oats within this recipe. They also make oatmeal packets, which make it convenient to take on the go. I used to eat them all enough time in college and they’ve been a staple in my own cupboard for a longgggg time. I’m pretty sure their steel-cut oats would also function, but just create a chewier, less dense texture.
Greek yogurt: I used organic simple greek yogurt for just a little boost of protein also to keep carefully the oats creamy. Believe me, the yogurt is necessary. If you’re dairy free, try using a coconut or almond milk yogurt.
Chia seed products: These help firm up the creaminess and keep carefully the mixture thick. If you are not really into chia seed products, you could try flaxseed food (surface up flaxseeds).
Pumpkin puree: Do not use pumpkin pie mix! Opt for genuine pumpkin here. I buy canned pumpkin because of its convenience
Optional add-ins: dried out cranberries, coconut flakes, pecans, almond or peanut butter, a teaspoon of chocolate chips, a little whipped cream on top! Make it
One very last thing! If you’re into meal prep like me, here’s a tip: Make a few jars on Weekend night and maintain them covered in the fridge for up to weekly. Nosh in it when you don’t have any time to cook in the mornings, take them to work to enjoy or just eat them for dessert (and top with just a little whip!).

1/2 cup unsweetened vanilla almond milk
1/4 cup pumpkin puree
1/2 teaspoon vanilla extract
2 teaspoons chia seeds
In a moderate bowl, mix jointly greek yogurt, almond milk, pumpkin puree, vanilla and maple syrup until well combined. Mix in oats, chia seed products and spices. Pour right into a cup jar or container and place in refrigerator for 4 hours or over night. Makes 1 providing of pumpkin right away oats.
We love pumpkin and Like overnight oats! Tried this recipe yesterday evening and discovered it to be lacking just a little sweetness. We don’t wish to add too much even more maple syrup or any artificial sweetners…therefore we were questioning if anyone experienced any concepts for fruit we could add to bring some more sweetness towards the recipe.
