Lettuce wraps in December? What’s going on with that?
They are actually really incredible and despite my initiatives to use Turkey Day time leftovers, it didn’t happen. After my battle with the flu, I didn’t want anything heavy. I know your body requires a break from that ease and comfort food too! Lettuce wraps with sassy sauce and delicious toppings might do just fine.

My birthday is also this month. I told you December was special. I’m going to be 23! I’ll need to bake something extra special for myself. Any recommendations?

1 pound of chicken breast, trim into 1/2 inch cubes
1 cup of shredded cabbage
1 cup of shredded carrots
1/2 red onion, diced
1/2 cup of Frank’s reddish warm Buffalo Sauce
1 tsp of olive oil
16 Bibb lettuce leaves, washed and separated
2 tablespoons of cilantro, chopped
Blue mozzarella cheese salad dressing
1 avocado, diced into small chunks
High temperature 1 tsp of essential olive oil in moderate skillet over moderate heat, add garlic, cabbage, and carrots. Mix regularly until cabbage is normally cooked and wilted. Add black pepper and sodium as preferred; remove from heat and reserve.
Within a seperate large skillet, heat 1 tsp of essential olive oil on medium-high heat and add chicken. Make chicken breast until juices run obvious, about 6-8 mins. Add cabbage mixture to chicken. Change heat to low; add Buffalo sauce and cover. Simmer for about ten minutes to let tastes sink in.
Scoop chicken to the lettuce. Best each lettuce cover with 1 teaspoon blue cheese, diced avocado, and a sprinkle of cilantro.
For added crunch increase crushed tortilla potato chips on top!
