This week I joined a pigs feet new years gym, where I’m quite certain my trainer is either Big Foot, a marine, or a specialist wrestler. He teaches my Nike Schooling Camp classes, which are a mix of plyometrics, military drills, cardio, and weights. Literally sweating waterfalls every time I go out of there; it’s very like the Insanity videos! I just think he’s wanting to eliminate me. But who knows.
I’ve also been taking pleasure in living close to the ocean as much as possible. Each day I try and make it right down to the seaside. I don’t indicate to make you jealous BUT look at this look at from my rooftop! Amazing.
I’m not prepared for Summer to get rid of or these sunlit days that seem to by no means cease. I’m shedding my roommate off on the airport in a couple of hours, where she’ll head to Greece to get a vacation… on the yacht. WHAT! I can’t even discuss it because I’m so jealous. My weekend plans consist of even more cooking, perhaps a small surfing, and most most likely a dinner with one of these mushroom + kale quesadillas and probably a couple of roasted blueberry basil margaritas to drown in my sorrows. Only kidding, I’ll be fine.
Probably my trainer would relax if I offered him a margarita? But then once again, he’s there to drive me to help me get in great shape; that is why I made these skinny! I can’t go around feeding on pie and doing leap squats; those two activities would not blend well.
These strawberries are a great party appetizer or summer season treat for anyone. The filling is made with reduced-fat cream parmesan cheese, non-fat vanilla greek yogurt (proteins!), key lime juice and zest. All you have to do is certainly hollow out the strawberries after that fill up them with this blend.
I topped my strawberries with sliced toasted almonds, but I think that crushed graham crackers would put in a lovely texture and be more reminiscent of a true essential lime pie or cheesecake.
So really the filling up can act as a dip, as well! A creamy, healthy essential lime cheesecake flavored drop perfect more than enough to serve to guests at a party, give your kids, or just to distract you from actual pie.
Well until next week when pie takes over this website and I throw images of oreos, bananas, peanut butter, and whip cream in your face. So just trust me, eat skinny things while you still can.
Skinny Essential Lime Cheesecake Stuffed Strawberries
1 teaspoon important lime zest
Optional toppings: Sliced up toasted almonds, graham cracker crumbs, extra zest, chocolate drizzle
Wash the strawberries and dry. Remove the top with a pairing knife; set strawberries apart until ready to fill.
Whip the cream mozzarella cheese until it really is fluffy and light. Flip in yogurt, crucial lime juice, and zest; blending until well combined. Refrigerate to thicken, about 20 minutes.
Add cream mozzarella cheese mixtue to a pastry handbag or ziploc bag with the end cut off. Fill each strawberry with the mixture and add extra toppings such as almonds, graham crackers crumbs, or delicious chocolate drizzle if preferred. Serve immediately or place in freezer for one hour for a great treat.
