This week I joined a new gym, where I’m quite certain my trainer is either Big Foot, a marine, or a specialist wrestler. He shows my Nike Training Camp classes, which certainly are a mixture of plyometrics, military drills, cardio, and weights. Actually sweating waterfalls every time I go out of there; it’s very similar to the Insanity videos! I just think he’s wanting to kill me. But who understands.
I’ve been savoring living close to the ocean as much as possible. Every day I try pigs feet and Beans make it down to the seaside. I don’t mean to make you jealous BUT understand this view from my rooftop! Amazing.
I’m not prepared for Summer time to end or these sun-drenched days that appear to by no means cease. I’m falling my roommate off in the airport terminal in a couple of hours, where she’ll check out Greece to get a vacation… on the yacht. WHAT! I can’t even talk about it because I’m so jealous. My weekend programs consist of even more cooking, perhaps a little surfing, and most likely a dinner with one of these mushroom + kale quesadillas and most likely a couple of roasted blueberry basil margaritas to drown in my own sorrows. Only kidding, I’m going to be fine.
Maybe my trainer would chill out if I offered him a margarita? But then again, he’s there to drive me to greatly help me get in great shape; that’s why I made these skinny! I can’t go around eating pie and carrying out jump squats; those two actions would not mix well.
These strawberries are a great party appetizer or summer months treat for anyone. The filling is made with reduced-fat cream parmesan cheese, nonfat vanilla greek yogurt (protein!), key lime juice and zest. All you need to do is definitely hollow out the strawberries after that fill them with this mix.
We topped my strawberries with sliced toasted almonds, but I think that crushed graham crackers would add a lovely texture and become more reminiscent of a true key lime pie or cheesecake.
So really the filling up can become a dip, as well! A creamy, healthy essential lime cheesecake flavored drop perfect plenty of to serve to guests at a party, give your kids, or just to distract you from actual pie.

Skinny Key Lime Cheesecake Stuffed Strawberries
1 teaspoon crucial lime zest
Optional toppings: Sliced toasted almonds, graham cracker crumbs, extra zest, chocolate drizzle
Wash the strawberries and dry out. Remove the best with a pairing blade; set strawberries apart until ready to fill.
Whip the cream mozzarella cheese until it is fluffy and light. Fold in yogurt, important lime juice, and zest; combining until well combined. Refrigerate to thicken, about 20 minutes.
Add cream cheese mixtue to a pastry handbag or ziploc handbag with the tip cut off. Fill up each strawberry using the mix and add additional toppings such as almonds, graham crackers crumbs, or chocolate drizzle if preferred. Serve instantly or place in freezer for an hour for a great treat.
