Formula by Monique of Ambitious Kitchen
1 teaspoon cooking powder
1 tablespoon of melted butter (if desired)
2 teaspoons vanilla
3 egg whites
2 tablespoons skim milk or milk alternative (almond, soy, coconut)
½ glass + 3 tablespoons sweetened flaked coconut
½ cup cut macadamia nuts
½ cup white delicious chocolate chips
Preheat oven to 350 levels F. Whisk flour, cooking powder, baking soda together in large mixing dish. In a separate large dish combine mashed bananas, melted butter, dark brown sugars, and vanilla. Add in egg whites, yogurt, and orange juice; combining together until just mixed and moist.
Add in flour and combine until moist. With regards to the consistency you can add 2 tablespoons of skim milk. (I usually do). If you want your bread more dense than omit the milk, but if you like it even more airy or lighter you can include it.
Softly fold in ½ cup of coconut, white chocolate chips, and macadamia nuts into batter. Pour into a greased 9×5 inches loaf skillet. Sprinkle the rest of the 3 tablespoons of coconut at the top. Bake for 50-60 minutes or until toothpick happens clean and the bread is golden brown.
Another option: Substitute ½ glass of regular flour with whole wheat flour
