How was your weekend? We finally create our family room with our fresh rug, plus I simply ordered a custom made designed ottoman, which I’m actually quite excited about. We picked a dark blue velvet color and can’t wait to see it when it arrives in a few weeks. Other new factors? A black custom french-looking table and a little side table that will be decorated a bronze platinum. Obsessed can be an understatement.
Hmmm what else? Chicago’s been crazy lately. We’ve got the Chicago marathon, the Cubs within the playoffs as well as the Bears actually won TWO games. Thus, I’ve been eating a little too very much pizza and pub food recently. What I’m really craving now could be a seriously good veggie burger with an enormous side salad.
Veggie burgers are wonderful because like regular burgers, you may get creative with the elements and toppings. I’ve made a few beloved versions but this one is definitely cozy, seasonal and flavored with curry and cumin. The vibrant flavors bring out the sweetness from the special potato and the savory goodness chickpeas. Love, love.
The nutrition shines in this recipe too! Nearly 6g of dietary fiber and over 7g of protein at under 200 calories. It’s a genuine, wholesome veggie burger it is possible to truly feel good about consuming. And bonus! They are totally fridge friendly. Just pop the uncooked patties inside a freezer-safe box! Once prepared to cook, simply thaw the burgers out and prepare them up as you normally would.

1 – 15 oz can easily chickpeas, rinsed and drained
1 teaspoon curry powder
1 1/2 teaspoons cumin
1/4 teaspoon garlic clove powder
1/3-1/2 cup breadcrumbs OR oat flour
1/3 cup dried cranberries
Preheat oven to 400 levels F.
Work with a fork to poke lovely potato several times. Place special potato on a little strategy lined with foil and bake within the range for 30-45 minutes or until fork sensitive.
While sweet potato is cooking, cook the wild grain by adding 1 cup water and wild rice to a moderate saucepan. Bring to a boil, then cover, reduce heat to low and simmer for 30-40 a few minutes or until sensitive.
Add cooked sweet potato (not your skin) and chickpeas to a large bowl; mash using a fork or potato masher. (Additionally you should use a food processor and pulse them until somewhat, but not completely even.) Next stir in cooked outrageous rice, curry powder, cumin and garlic powder. Add salt and pepper to taste. Then stir in breadcrumbs (or oat flour), cranberries and pecans, if using. The pecans add a beautiful taste, but aren’t required. Shape mix into six patties. It’s better to form and cook the patties if they are cool, so if you’d like you can keep the mixture within the fridge until chilly then type patties (I recommend doing it in this manner!).
Heat coconut oil over medium temperature in a big pan. Once oil is warm, add patties and make for approximately 7-9 minutes, after that VERY carefully flip. Cook for yet another 7-9 minutes on the other side, adding more essential oil to the skillet if necessary. Serve on their own or in a bun! I really like mine with avocado & arugula. Makes 6 burgers.
And these veggie burgers appear ridiculous. Bring about the sugary potatoes!
I’ve made these before and they are totally fantastic. My 1st try, I used corn (1 glass) in sub for the chickpeas, and utilized walnuts. I also put some oats within the grinder for the flour. It works really well. It was surprising to have a curry-flavoured patty, but it’s absolutely delish. My second time, I followed the recipe towards the tee with some walnuts. Yum yum. This is a staple to my meal-prepping as my weeks obtain very busy!
PS I also just try to ‘nuke’ the special potatoes in the microwave to create it faster.
