This whole muffin food truck idea came to me once i ordered my monthly Peapod delivery I do this quite often when I don’t have enough time to check out the grocery store; it’s a serious time saver. This recipe for paleo zucchini muffins is my new fav. Probably EVER. Significantly, that’s how much I enjoy these muffins! They’re normally sweetened with banana along with a hint of maple syrup. The coconut flour also adds hook sweetness to the muffins that produce them impossible to resist. I usually possess one with two eggs for breakfast time, or appreciate one for a day snack pick and choose me up.

Paleo Banana Zucchini Muffins
