How incredible would it not be if I drove up to your house in a vehicle that served ONLY muffins? Would we immediately be BFFs? Can you pay out me in yellow metal?
Hopefully the very thought of me rolling up in a muffin truck and handing out muffins doesn’t sound weird. I have good intentions, I swear.
This whole muffin food truck idea came to me once i ordered my monthly Peapod delivery I do this quite often when I don’t have enough time to check out the grocery store; it’s a serious time saver. For me personally, it’s also preventing the chaos of food shopping in the city where people strike both my own body and car making use of their shopping carts. One last perk I must add: I really like that this friendly delivery drivers introduces the groceries to my house door (so that I don’t have to carry hand bags up a few flights of stairs).
This month, I ordered a Peapod Farm Box from I had developed no idea what to expect other than a box filled with fresh, local farm produce. When the container came, I had been both surprised by how large it was, but also by the amount of produce included: kale, swiss chard, green beans, garlic, little potatoes, beets, summer time squash and zucchini!
Basically a small garden was delivered to my door. And I loves it.
By now I think we’ve all figured out how much I enjoy zucchini; it offers wonderful moisture to baked products and is packed with both potassium & dietary fiber. Noms.
This recipe for paleo zucchini muffins is my new fav. Probably EVER. Significantly, that’s how much I enjoy these muffins! They’re normally sweetened with banana along with a hint of maple syrup. The coconut flour also adds hook sweetness to the muffins that produce them impossible to resist. I usually possess one with two eggs for breakfast time, or appreciate one for a day snack pick and choose me up.
Nothing beats an excellent muffin. Seriously, you understand I’m right.
Time to get the bake on. Right freaking now!

Paleo Banana Zucchini Muffins
Preheat oven to 350 levels F. Series a muffin tin with 10 muffin liners. You’re just making 10 muffins, therefore keep two liners out.
Press shredded zucchini of extra moisture with a paper towel. In a big bowl, add zucchini, banana, cashew butter, maple syrup, eggs and vanilla. Mix until clean and well mixed.
Next increase the dry ingredients to the damp ingredients: coconut flour, baking soda and sodium. Mix until mixed.
Divide batter equally between 10 muffin cups. Bake for 22-27 minute or until toothpick comes out clean and the tops of the muffins are just slightly golden brownish. Makes 10 muffins.
Feel absolve to work with a different nut butter such as: almond or peanut. Sunflower will also work, however your muffins risk turning green; sunflower seed products consist of chlorophyll which reacts with the baking soda/natural powder in meals when heated and then once cooled, can change green.
Muffins are freezer friendly. If you wish to freeze them, merely wait around until muffins are totally cool, then shop in an airtight container or freezer safe plastic baggie.
To create muffins vegan: I think you can include a flax or chia egg and also have them workout well! I haven’t attempted it, but please let me know should you choose.
If you want feel free to add blueberries or chocolates potato chips to these muffins!
Do you think it would alter the recipe too much if I added spinach to the muffins?
