How incredible would it be easily drove up to your dwelling in a pickup truck that served ONLY muffins? Would we instantly be BFFs? Would you pay me in silver?
Hopefully the thought of me rolling up in a muffin truck and offering muffins doesn’t sound weird. I have good intentions, I swear.
This whole muffin food truck idea found me after i ordered my monthly Peapod delivery I really do this quite often when I don’t have enough time to check out the grocery store; it’s a significant time saver. For me, it’s also avoiding the chaos of food shopping in the city where people strike both my body and car with their shopping carts. One last perk I have to add: I really like that the friendly delivery driver introduces the groceries to my house door (so that I need not carry hand bags up a few flights of stairways).
This month, I ordered a Peapod Farm Box from I needed no idea what to expect other than a box full of fresh, local farm produce. Once the container came, I had been both amazed by how huge it was, but additionally by the quantity of make included: kale, swiss chard, green coffee beans, garlic, little potatoes, beets, summer time squash and zucchini!
Basically a little garden was delivered to my door. And I adores it.
By now I believe we’ve all figured out how much I adore zucchini; it gives wonderful moisture to baked products and is filled with both potassium & fiber. Noms.
This recipe for paleo zucchini muffins is my new fav. Most likely EVER. Significantly, that’s how much I adore these muffins! They’re naturally sweetened with banana and a hint of maple syrup. The coconut flour also provides hook sweetness towards the muffins that make them difficult to resist. I usually have got one with two eggs for breakfast time, or appreciate one for a day snack pick me up.
Nothing beats an excellent muffin. Come on, you understand I’m right.
Time to make your bake on. Best freaking now!
I hope you like these just as much once we did. I’ve produced many batches since and have scarfed each down fairly quickly. Reward: They’re freezer friendly too! The next time I’m gonna then add chocolate chips. You know, for good measure.
P.S. If you love these additionally you might enjoy:

Preheat oven to 350 degrees F. Series a muffin tin with 10 muffin liners. You’re just producing 10 muffins, so keep two liners out.
Squeeze shredded zucchini of surplus moisture having a paper towel. In a large dish, add zucchini, banana, cashew butter, maple syrup, eggs and vanilla. Blend until even and well mixed.

Divide batter consistently between 10 muffin mugs. Bake for 22-27 minute or until toothpick comes out clean and the tops of the muffins are simply slightly golden dark brown. Makes 10 muffins.
Feel absolve to work with a different nut butter such as for example: almond or peanut. Sunflower will also work, however your muffins risk turning green; sunflower seeds contain chlorophyll which reacts with the cooking soda/natural powder in meals when heated and then once cooled, can turn green.
Muffins are refrigerator friendly. If you wish to freeze them, merely wait around until muffins are completely cool, then shop within an airtight pot or freezer secure plastic baggie.
To make muffins vegan: I believe you can include a flax or chia egg and also have them workout well! I haven’t tried it, but please let me know should you choose.
If you’d like feel absolve to add blueberries or chocolates potato chips to these muffins!
Do you think it could alter the recipe too much if I added spinach to the muffins?
i am looking for a recipe where I could max out the veggie articles for my toddler. He has taken to tossing all vegetables on the ground at mealtime.
