We had an unbelievable time baking cookies (brand-new recipe just around the corner), discovering the North End, playing around Southie, and laughing until we couldn’t any longer. Life is great! I’ll have a recap quickly of most of my Boston outings plus some favorite issues of mine, as well! But of course, Monday arrived and holiday ended. And now it’s October; I cannot believe it! I am busy operating outside endeavoring to soak it all up before Minnesota climate comes swinging along with detrimental temperatures. Certainly since it has been therefore lovely, I’ve been slacking within the baking department. Sorry about this! I’m back today… with tasty small bars. You’re thrilled, right?

You should be! I’m a HUGE fan of all things pumpkin. In fact if I got to select my last meal on earth, it might be a simple cut of warm pumpkin pie with whipped cream. That’s my heaven. Seriously pumpkin is the JAM to my peanut butter. What I must say i mean is normally that it completes me.

These bars are just as wonderful as pie in their own way. They make mornings just a little brighter. Somehow they feel passionate and will definitely have your house smelling like fall.

Oh and did We mention that they are healthy? Yes, you can totally consume them for breakfast time or being a snack – there’s just 128 calories per pub and healthy ingredients, too!

To ensure this recipe was gluten free, I used gluten-free oats to create oat flour (listed in the instructions). Making oat flour among the easiest things you can do, and especially wonderful if you are gluten free! Oats hold a huge amount of moisture and offer healthful carbs – therefore eat up!

Second, I used TAKE IT EASY chocolate chips to keep carefully the recipe vegan-friendly. Nevertheless in the event that you aren’t vegan, pigs feet regular mini potato chips will work just fine!

Ingredients

2 teaspoons aluminum free of charge baking powder

1/2 teaspoon baking soda

2 teaspoons pure vanilla extract

1/2 cup unsweetened applesauce

1 tablespoon olive or coconut oil

1/3 cup vegan chocolate chips, plus 2 tablespoons for sprinkling at the top

Instructions

Preheat oven to 350 levels F. Spray 8×11 or 9 inches baking pan with nonstick cooking food spray.

Make oat flour: Place oatmeal into blender or meals processor and mix for 1-2 mins until oatmeal resembles flour. You may need to end blender and stir oats a couple of times to make sure that all oats have already been blended.

Measure out just 2 1/2 cups from the oat flour and place inside a medium bowl. Whisk in baking powder, baking soda, salt and spices; set aside.

In another large dish, whisk together pumpkin, brown sugar, vanilla extract, oil, and applesauce for 1-2 minutes before consistency is smooth and creamy. Gradually add oat flour combination and combine until just mixed.

Gently fold in 1/3 cup of chocolate chips. Pour batter into prepared pan and sprinkle staying 2 tablespoons of chocolate chips at the top. Bake for 15-25 mins or until blade inserted into center arrives clean or with just a few crumbs attached. Timing depends on what size pan you utilize, but definitely check around quarter-hour. Once finished baking, cool ten minutes on wire rack. Cut into 16 pieces.

Bars could be frozen. Just bake, cool, cut; store in ziploc handbag. Reheat independently for 30 seconds in microwave.

Be sure you go through all ingredients and nutrition info to make sure recipe is normally gluten free/vegan, if that is everything you desire.

Delicious!! I produced these tonight and anticipate making a second batch soon.

I’m wanting to know how adding some peanut butter would work? A little bit of extra protein and flavour but might be too much?

Hi Monique!! I believe I’m doing something wrong with these pubs. I produced them the first time even though they appeared amazing, they had a really solid after-taste (kind of metallicy/soapy). I analyzed the formula and recognized I hadn’t used aluminum-free baking natural powder. So I produced them again, this time around using the right baking powder. Once again they looked amazing but had exactly the same aftertaste. I must say i want to like these….have you got any idea on what I’m doing wrong? I feel like I’m a little crazy, but I swear I’m following a recipe exactly, aside from spraying my skillet with coconut essential oil spray (I’ve thought about that and do not think this step would yield the effect I’m getting).

These bars are So excellent! I am not vegan therefore i used 2 eggs rather than the applesauce, just because I needed no applesauce on hand. I also used nearer to 2/3 glass chocolate chips. These are not super sugary, but so damp! I want to share them so I don’t eat them all myself but at the same time don’t want to talk about whatsoever!! These will be a staple for me personally when I need a sweet treat.

Does anyone eventually know the vitamins and minerals for the original recipe?
