We had an unbelievable time cooking cookies (brand-new recipe coming soon), exploring the North End, running around Southie, and laughing until we couldn’t any longer. Life is great! I’ll have a recap quickly of all of my Boston outings plus some favorite items of mine, as well! But needless to say, Monday emerged and vacation ended. And today it’s October; I cannot believe it! I’ve been busy working outside seeking to soak everything up before Minnesota climate comes swinging along with negative temperatures. Certainly since it has been so lovely, I am slacking within the cooking department. Sorry about this! I’m back now… with tasty small bars. You’re thrilled, right?
You should be! I’m an enormous fan of all things pumpkin. In fact if I had to select my last food on earth, it might be a simple slice of warm pumpkin pie with whipped cream. That’s my heaven. Seriously pumpkin is the JAM to my peanut butter. What I must say i mean is that it completes me.
These bars are simply as beautiful as pie within their very own way. They make mornings just a little brighter. Somehow they feel passionate and will definitely have your house smelling like fall.

1/3 cup vegan chocolate chips, plus 2 tablespoons for sprinkling on top
Preheat oven to 350 degrees F. Apply 8×11 or 9 inches baking pan with nonstick cooking spray.
Make oat flour: Place oatmeal into blender or food processor and blend for 1-2 a few minutes until oatmeal resembles flour. You may want to end blender and stir oats once or twice to ensure that all oats have already been blended.
Measure out simply 2 1/2 cups from the oat flour and place inside a moderate dish. Whisk in baking powder, baking soda, salt and spices; reserve.
In a separate large dish, whisk collectively pumpkin, brown sugar, vanilla extract, oil, and applesauce for 1-2 minutes until the consistency is clean and creamy. Slowly add oat flour mix and combine until just combined.
Softly fold in 1/3 cup of chocolate chips. Pour batter into ready skillet and sprinkle staying 2 tablespoons of chocolates chips at the top. Bake for 15-25 moments or until blade inserted into middle arrives clean or with just a couple crumbs attached. Timing depends on what size pan you use, but definitely search around for a quarter-hour. Once finished cooking, cool ten minutes on wire rack. Cut into 16 slices.
Bars can be frozen. Simply bake, cool, cut; shop in ziploc handbag. Reheat individually for 30 seconds in microwave.

Hi Monique!! I believe I’m doing something wrong with these pubs. I produced them the very first time and while they looked amazing, that they had a really solid after-taste (sort of metallicy/soapy). I studied the formula and realized I hadn’t used aluminum-free baking powder. So I made them again, this time using the correct baking powder. Once again they looked amazing but acquired the SAME aftertaste. I really want to love these….do you have any idea on what I’m doing wrong? Personally i think like I’m a bit crazy, but I swear I’m following a recipe exactly, except for spraying my skillet with coconut essential oil spray (I’ve thought about that and don’t think this step would yield the result I’m getting).

These bars are SO good! I am not vegan therefore i used 2 eggs rather than the applesauce, only because I had fashioned no applesauce readily available. I also used closer to 2/3 glass chocolate chips. These are not really super nice, but so damp! I wish to talk about them therefore i don’t eat them all myself but at the same time don’t want to talk about at all!! These is a staple for me personally when I want a sweet treat.
Does anyone happen to know the nutritional value for the original recipe?
