Hello you lovely souls. I’m sitting in an attractive, cozy king bed writing for you from Hilton Head Health , an exercise and wellness vacation resort in Hilton Head, SC. Earlier this week continues to be so refreshing for me personally in more ways than I could fathom to write about. Sometimes you merely can’t put into words everything you feel whenever your center is stable and content. I feel beyond lucky to become invited here; the inspiration in wellness classes, new friends and being a little more vulnerable has left me using a realization that I have to forget about my worries of judgement with regards to blogging and getting more personal.
My goodness is it possible to believe AK continues to be cooking for a little over three years? I’ve created here about my entire life experiences, career adjustments, moving, human relationships, friendships and my ever developing obsession with Zac Efron.
What I haven’t included is my real and constant struggle with food; certainly it’s the love of my entire life (questionable because of Tony). I don’t wish this post to become too heavy, but do need you to know that this blog page will change and grow, just as any individual does. And as any relationship goes, I hope we’re with this together; that you will still arrived at AK to make my recipes because they certainly are not really going apart. I’ll you need to be writing more about this journey I’m on.

But more than enough serious business. Let’s get onto the treats I baked for you today! Flourless Pumpkin Almond Butter Bars. I know, best? With dark chocolate as well as perhaps some coconut if you extravagant it (you SO fancyyy).
I’m so content that these bars cooked up so delightfully and full of pumpkin flavor. I used to be scared the almond butter would come through an excessive amount of, but it turns out that these fulfill a pumpkin craving like no additional.
What I’m specifically excited about may be the wonderful diet in these bars. Lots of vitamins plus antioxidants (from dark chocolate) taking place. They’re also gluten free, low carb, dairy products free, paleo and grain free. I’m fairly specific you could conveniently veganize them by adding a flax egg (1 T ground flax seed + 3 tablespoons water). I love enjoying mine in the afternoon with a big sit down elsewhere.
To serve them as a dessert, I suggest topping them off with just a little coconut whipped cream or homemade almond butter smeared over the top having a sprinkle of sea salt. Ingredients
1/2 cup pumpkin puree
1 egg
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your favorite dark chocolate bar (a minimum of 70% cocoa), coarsely chopped
Instructions
Preheat oven to 350 degrees F. Apply an 8×8 inch baking skillet with nonstick cooking food spray.
In a large bowl, whisk jointly all ingredients except coconut and dark chocolate. Once substances are well mixed, fold in 1/4 glass from the coconut flakes and every one of the dark chocolate.
Pour into prepared skillet and sprinkle the rest of the coconut flakes at the top. Bake for 20 a few minutes or until somewhat golden brown around the edges. Place skillet on cable rack to cool. Once cool, slice into 16 squares. Enjoy!

TO MAKE VEGAN: Try using a flax egg to displace the egg.
If you omit the coconut and chocolates, each club (based on 16 bars) is around 67 calorie consumption.
If you simply leave out the coconut, the bars is a little under 100 calorie consumption.
Rather than almond butter, you can use another natural nut butter of your decision. I don’t recommend sunflower seed butter. Peanut butter would be delicious!
