Hello you lovely souls. I’m sitting in a beautiful, cozy ruler bed writing for you from Hilton Head Health , a fitness and wellness resort in Hilton Mind, SC. This past week continues to be so refreshing for me in more ways than I could fathom to write about. Sometimes you merely can’t put into words what you feel when your center is continuous and content. I feel beyond lucky to be invited right here; the motivation in wellbeing classes, new friends and being truly a little more vulnerable has still left me having a realization that I have to let go of my doubts of judgement with regards to blogging and being more personal.
My goodness is it possible to believe AK continues to be cooking for a little over three years? I’ve written here about my entire life experiences, career adjustments, moving, associations, friendships and my ever growing obsession with Zac Efron.
What I haven’t included is my real and constant battle with food; certainly it’s the like of my life (questionable because of Tony). I don’t desire this post to become overweight, but do want you to learn that this blog changes and grow, just as any human being does. And as any relationship will go, I hope we’re within this together; that you will still go to AK to make my recipes simply because they certainly are not going apart. I’ll just be writing more about this trip I’m on.

But enough serious business. Let’s obtain onto the treats I baked for you today! Flourless Pumpkin Almond Butter Bars. I know, ideal? With dark chocolate and perhaps some coconut in the event that you elegant it (you SO fancyyy).
I’m so content that these pubs cooked up so delightfully and filled with pumpkin flavor. I was scared the almond butter would come through an excessive amount of, but it turns out that these fulfill a pumpkin craving like no additional.
What I’m especially excited about is the wonderful diet in these bars. Plenty of vitamins plus antioxidants (from chocolates) happening. They’re also gluten free, low carb, dairy products free, paleo and grain free of charge. I’m fairly particular you could quickly veganize them by adding a flax egg (1 T surface flax seed + 3 tablespoons drinking water). I love enjoying mine within the afternoon using a big cup of coffee.
To serve them as a dessert, I would recommend topping them away with a little coconut whipped cream or homemade almond butter smeared outrageous with a sprinkle of ocean salt. Just believe me on this one men; sweet and salty is always the answer.

Recipe type: Gluten Free, Dairy Free, Flourless, LOW CARBOHYDRATE, Grain Free
1/2 cup pumpkin puree
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your favorite dark chocolate club (a minimum of 70% cocoa), coarsely chopped
Preheat oven to 350 degrees F. Apply an 8×8 inches baking skillet with nonstick food preparation spray.
In a big bowl, whisk jointly all ingredients except coconut and chocolates. Once elements are well mixed, fold in 1/4 glass from the coconut flakes and every one of the dark chocolate.
Pour into prepared pan and sprinkle the rest of the coconut flakes at the top. Bake for 20 moments or until somewhat golden brown for the edges. Place skillet on wire rack to awesome. Once cool, trim into 16 squares. Enjoy!

TO CREATE VEGAN: Try using a flax egg to displace the egg.
If you leave out the coconut and delicious chocolate, each pub (predicated on 16 pubs) is around 67 calories.
If you simply leave out the coconut, the bars is a little under 100 calories.
Rather than almond butter, you can use another natural nut butter of your decision. I don’t recommend sunflower seed butter. Peanut butter would be delicious!
