This past week continues to be so refreshing for me in more ways than I can fathom to write about. Sometimes you just can’t placed into words what you feel whenever your center is steady and content. Personally i think beyond lucky to be invited right here; the inspiration in wellbeing classes, new friends and being truly a little more susceptible has still left me having a realization that I have to let go of my worries of judgement with regards to blogging and getting more personal.
My goodness is it possible to believe AK has been cooking for just a little over 3 years? I’ve created here about my life experiences, career adjustments, moving, relationships, friendships and my ever growing obsession with Zac Efron.
What I haven’t included is my real and constant struggle with food; certainly it is the like of my life (questionable due to Tony). I don’t want this post to become too heavy, but do want you to know that this blog changes and grow, just as any individual does. But plenty of serious business. Let’s obtain onto the snacks I baked for you personally today! Flourless Pumpkin Almond Butter Bars. I know, right? With dark chocolate and perhaps some coconut in the event that you fancy it (you SO fancyyy).
I’m so happy that these bars cooked up so delightfully and full of pumpkin flavor. I used to be afraid the almond butter would come through an excessive amount of, but it works out that these satisfy a pumpkin craving like no various other.

Recipe type: Gluten Free of charge, Dairy Free of charge, Flourless, LOW CARBOHYDRATE, Grain Free
1/2 cup pumpkin puree
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your favorite dark chocolate pub (at least 70% cocoa), coarsely chopped
Preheat oven to 350 degrees F. Apply an 8×8 in . baking pan with nonstick cooking food spray.
In a big bowl, whisk jointly all ingredients except coconut and dark chocolate. Once substances are well combined, fold in 1/4 cup of the coconut flakes and all the dark chocolate.
Pour into prepared skillet and sprinkle all of those other coconut flakes at the top. Bake for 20 moments or until somewhat golden brown over the edges. Place skillet on cable rack to great. Once cool, lower into 16 squares. Enjoy!

TO MAKE VEGAN: Use a flax egg to displace the egg.
If you leave out the coconut and chocolate, each bar (based on 16 pubs) is around 67 calorie consumption.
If you just leave out the coconut, the bars is a little under 100 calorie consumption.
Rather than almond butter, you should use another natural nut butter of your decision. I don’t recommend sunflower seed butter. Peanut butter would be delicious!
