Hello you lovely souls. I’m seated in a beautiful, cozy king bed writing for you from Hilton Head Health , an exercise and wellness holiday resort in Hilton Mind, SC. This past week continues to be so refreshing for me in more methods than I can fathom to create about. Sometimes you just can’t placed into words everything you feel whenever your heart is constant and content. Personally i think beyond lucky to become invited here; the motivation in health and fitness classes, new friends and being a little more susceptible has left me with a realization that I have to forget about my anxieties of judgement when it comes to blogging and becoming more personal.
My goodness is it possible to believe AK continues to be cooking for just a little more than 3 years? I’ve created here about my life experiences, career changes, moving, interactions, friendships and my ever growing obsession with Zac Efron.
What I haven’t included is my real and constant battle with food; certainly it is the like of my life (questionable because of Tony). I don’t want this post to be too heavy, but do desire you to learn that this blog will change and grow, just like any human being does. So when any relationship will go, I am hoping we’re in this together; that you’ll still arrived at AK to create my recipes simply because they certainly are not really going aside. I’ll just be composing more about this journey I’m on.

But enough serious business. Let’s obtain onto the snacks I baked for you today! Flourless Pumpkin Almond Butter Pubs. I know, right? With chocolates as well as perhaps some coconut if you extravagant it (you SO fancyyy).
I’m so content that these bars cooked up so delightfully and filled with pumpkin flavor. I had been scared the almond butter would come through too much, but it works out that these satisfy a pumpkin craving like no other.
What I’m specifically excited about may be the wonderful nutrition in these bars. Plenty of vitamins plus antioxidants (from dark chocolate) happening. They’re also gluten free, low carb, dairy free, paleo and grain free of charge. I’m fairly particular you could conveniently veganize them with the addition of a flax egg (1 T floor flax seed + 3 tablespoons water). I really like enjoying mine within the afternoon having a big cup of coffee.
To serve them being a dessert, I would recommend topping them away with just a little coconut whipped cream or homemade almond butter smeared over the top with a sprinkle of ocean salt. Just trust me upon this one men; special and salty is always the answer.

Ingredients
1/2 cup pumpkin puree
1 egg
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your preferred dark chocolate pub (a minimum of 70% cocoa), coarsely chopped
Instructions
Preheat oven to 350 degrees F. Apply an 8×8 in . baking skillet with nonstick cooking spray.
In a big bowl, whisk jointly all ingredients except coconut and dark chocolate. Once ingredients are well mixed, fold in 1/4 cup of the coconut flakes and all of the dark chocolate.
Pour into prepared skillet and sprinkle all of those other coconut flakes on top. Bake for 20 mins or until somewhat golden brown within the edges. Place skillet on cable rack to cool. Once cool, trim into 16 squares. Enjoy!

TO MAKE VEGAN: Try using a flax egg how to cook pig feet in the oven displace the egg.
If you leave out the coconut and delicious chocolate, each club (based on 16 pubs) is around 67 calorie consumption.
If you just omit the coconut, the bars will be a little under 100 calorie consumption.
Rather than almond butter, you should use another natural nut butter of your choice. I don’t recommend sunflower seed butter. Peanut butter will be delicious!
