These waffles are ideal after a workout and freeze very well. I love topping them with with several sliced up bananas and just a little creamy peanut butter so that it melted in to the waffle wallets. Mmmm nothing at all beats breakfast for dinner.
2 teaspoons cinnamon
pinch of nutmeg
2 ripe large bananas, mashed (about 3/4 glass)
4 egg whites, lightly beaten
1 tablespoon vanilla extract (gluten free, if desired)
2 cup unsweetened vanilla almond milk
1/2 cup mini chocolates chips, if desired
Preheat waffle iron and aerosol with nonstick cooking spray. In a large bowl, whisk together quinoa flour, cinnamon, nutmeg, and baking powder; set aside.
In a separate large bowl, combine banana, egg whites, vanilla extract, and almond milk until well combined. Combine in dry ingredients until well combined. Fold in chocolates chips if preferred.
Spoon batter into waffle iron and make until steam stops and waffles are golden dark brown and slightly crispy on the outside. Repeat with remaining batter. Quality recipes makes about 8 Belgian waffles.
Unless you have quinoa flour available, you can test and use whole wheat pastry flour or white whole wheat flour, although then they wouldn’t be gluten free.
Rather than almond dairy feel absolve to use coconut or regular dairy.
If you don’t use chocolate chips, each waffle is only 163 calories.

I made these with a few slight modifications. When the batter was as well thin, I added about a half a cup of oats to thicken it up. I combined it all within the blender as well.
