I’ve been thinking a lot lately about this blog page and what it represents to me.

I’ve go to the conclusion that it’s so much more than just sharing recipes; this website is a place for inspiration and stories. A minimum of that’s what I’ve usually tried to create it; however, recently I feel like I’m getting additional from that.

It simply feels… redundant. I have to put my passion back into it.

Therefore, we’re getting back again to it! Back again to when I shared my inspiration, fitness posts, healthy living guidelines, dreams, and stories! More personalized. I am hoping you don’t mind, but it’s not just food which makes me content anymore; it is the story behind the meals.

First Let me tell you about the very first time I fell deeply in love with pumpkin. I used to be 9 years old and my mother and I baked a pie from scratch. The ease and comfort pumpkin pie brings me is definitely unparalleled.

I’m also a huge lover of oatmeal which I really didn’t begin eating until I used to be in college. Now I eat oatmeal pancakes, bowls of oatmeal, and oatmeal in muffins! I love how healthy it really is and am continuously looking for new ways to add it to my meals.

Now I know some of you’re requesting an oatmeal breakfast recipe therefore i place two of the best things together for an extremely delicious fall breakfast. Baked Pumpkin Pie Oatmeal!

Pumpkin pie spices in a lightly sweetened oatmeal breakfast time bake. Not sure when you can have a breakfast time better than this. I’m in like!

Oh and I must not forget to inform you on the subject of those bananas on top. I tossed sliced up bananas in a bit of brown glucose and vanilla bean. You guyssssss. It’s amazing!

The bananas caramelize when bake and put beneath the broiler for a couple minutes by the end of baking. They’re somewhat crispy and fantastic, and add a little bit of sweetness towards the oatmeal.

This recipe is simple to throw together, too! Simply whisk up wet and dry elements, combine together, then bake for a little over 30 minutes. Cover and refrigerate for breakfast through the entire week, or you can even freeze and reheat for later! I love slicing mine into squares and experiencing them being a pre-workout morning hours snack! It’s also wonderful drizzled with just a little extra maple syrup.

Ingredients

1/2 teaspoon aluminum free cooking powder

1/4 teaspoon salt

2 teaspoons vanilla

1 3/4 cup unsweetened vanilla almond milk (regular, soy or coconut milk also functions)

2 medium ripe bananas, sliced

2 teaspoons dark brown sugar

Instructions

Preheat oven to 375 degrees F. Apply 9×13 glass cooking pan with nonstick cooking spray.

Add bananas, dark brown sugar, vanilla, and vanilla beans to a medium bowl. Provide it several stirs so that brown sugar coats every one of the bananas; set aside.

In a large bowl whisk collectively oats, baking powder, sodium, cinnamon, cloves, and nutmeg.

In a separate large bowl, combine pumpkin, egg whites, maple syrup, and vanilla; combine until soft and creamy. Whisk in almond dairy until well mixed. Add pumpkin blend to the dry mixture – combine well. Pour into ready pan and consistently top with dark brown sugar vanilla bean banana slices.

Bake for 35 moments or until top is golden dark brown and oatmeal is set. Sprinkle a little more brown sugar on top of bananas; start broiler and broil for a couple minutes (view carefully!). Scoop into bowls and serve instantly with extra almond dairy or cinnamon, if preferred. Makes 6 portions.

I’ve a recipe for the baked banana, oats, and Nutella dish We made about a 12 months back. This reminds me of it b/c from the sliced up bananas and exactly how they get yourself a small caramelized. Wow, I bet they are simply so scrumptious!

One more question. May be the vanilla bean required? Could extra vanilla extract be used rather?

So, I produced this dish for the next time this week, and it arrived so much better than the 1st time I managed to get. As I stated in an previous post, I accidentally overlooked the almond dairy the first time. So this time I made sure to add it, and the oatmeal came out actually moist. Another thing I did so, was add bananas into the damp ingredients, as well as the caramelized bananas on top. This actually put into the recipe.

I just need to tell you that We haven’t been able to prevent eating it. This really is an unbelievable formula. For those of you who haven’t managed to get yet, I desire you to take action. This really is a special recipe!!!!
