To be honest, I kind of need a break. I am working a ridiculous amount recently and I feel as though I need some down time. Since I function a full time job beyond this blog, I really only have enough time to create dishes around the weekends. That translates into me working on a regular basis. From Saturday morning hours to Sunday night you’ll find me at Ambitious Kitchen HQ creating absurd messes that I never want to completely clean up.

Okay but really… is it possible to believe that 1 brownie has ONLY 86 calorie consumption and 6g of glucose? YES, it’s accurate.
These are made with peanut butter, honey, applesauce, and zucchini, and guess what? The only thing you taste is chocolates and hook chewy texture in the oats. I’m quite impressed with myself.

1/4 glass honey or agave nectar
1/2 cup unsweetened organic applesauce
1 teaspoon vanilla
1 teaspoon cooking soda
1/2 cup dark chocolate chips (vegan if preferred), divided
Preheat oven to 350 degrees F. Spray 8×11 baking pan with nonstick cooking spray.

Can I just state I totally understand how you feel on the whole nonstop working thing? I am blogging for about 8 months today and I love it but it eats up all of my free time in the weekend. It’s seriously exhausting but so difficult to stop on! Complain all you have to, I’m right here to wallow in it together with you!! ðŸ‚
These turned on the subject of amazingly well but I made several changes:
1) We added a 1/4C of additional sugar as the batter wasn’t very lovely.
2) I used homemade apple sauce (much less water than commercial).
3) I cooked them in muffin mugs to make them simpler to serve.
4) Sprinkled them with ‘pearl sugars’ to make them look nice.
EVERYONE (even the non vegans) liked these. Very gooey/dark chocolate tasting. Really a great keeper. Unlike various other ‘no-fat’ desserts, which can haver horrible structure, this one really worked. Looking forward to trying it again to see easily simply got lucky or it could be repeated…
They were divine!! I am an enormous lover of marrying zucchini and delicious chocolate!! I have a popular recipe I have already been making for years- Spiced Belgian Chocolate Zucchini Bread that i could replace with this formula. This is a perfect fit for my recent gluten-free & low glucose diet!! I suppose I could usually add the cloves and cinnamon to give it that spiced kick, as well!
