Flourless Chocolate Chip Zucchini Oat Brownies vegan, gluten free & healthy

To be honest, I kind of need a break. I am working a absurd amount lately and I feel as though I want some down time. Since I function a full time job beyond this blog, I really only have the time to create dishes on the weekends. That translates into me working all the time. From Saturday morning hours to Sunday night you can find me at Ambitious Kitchen HQ creating absurd messes which i never want to completely clean up.

Ugh I always say that, don’t I?
Okay but really… is it possible to believe that 1 brownie has ONLY 86 calories and 6g of sugar? YES, it’s true.
These are made with peanut butter, honey, applesauce, and zucchini, and do you know what? The thing you flavor is chocolate and hook chewy texture through the oats. I’m quite impressed with myself.
Oh, oh, oh! These are totally gluten free of charge; and vegan in the event that you swap maple syrup for honey and make use of vegan chocolate chips.

Ingredients
1/4 glass honey or agave nectar
1/2 cup unsweetened natural applesauce
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup chocolates chips (vegan if desired), divided
Instructions
Preheat oven to 350 degrees F. Apply 8×11 baking pan with nonstick cooking food spray.
Place oats in blender or food processor and process until finely ground. Don’t worry, it generally does not have to be perfect but it should have a few minutes. Set aside.
In a large bowl of electric mixer, cream jointly peanut butter, applesauce, honey and vanilla until smooth. Add zucchini, cocoa powder, ground oats, baking soda, and sodium; combine until well combined. Gently collapse in 1/4 glass of chocolate potato chips. Pour batter into prepared baking skillet and sprinkle staying chocolate chips over the top. Bake for 25-30 minutes or until tooth pick inserted into middle comes out almost clean.
Awesome brownies completely about wire rack after that trim into 20 squares. Enjoy!

Can I just state I totally know how you are feeling on the whole nonstop working thing? I’ve been blogging for about 8 months right now and I love it but it eats up all of my leisure time over the weekend. It’s significantly exhausting but so hard to stop on! Complain all you have to, I’m right here to wallow in it with you!! ðŸ‚
These turned approximately amazingly well but I made a few adjustments:
1) I added a 1/4C of additional glucose as the batter wasn’t very lovely.
2) I used homemade apple sauce (significantly less water than business).
3) I cooked them in muffin mugs to create them better to serve.
4) Sprinkled them with ‘pearl sugar’ to make them look great.
EVERYONE (even the non vegans) cherished these. Extremely gooey/dark delicious chocolate tasting. A really great keeper. Unlike various other ‘no-fat’ desserts, which can haver horrible consistency, this one actually worked. Getting excited about trying it once again to see if I just got lucky or it can be repeated…
These were divine!! I am an enormous enthusiast of marrying zucchini and chocolate!! I have a popular recipe I have been making for years- Spiced Belgian Chocolate Zucchini Bread which I might just replace with this formula. This is a perfect fit for my recent gluten-free & low sugar diet!! I suppose I could generally add the cloves and cinnamon to give it that spiced kick, as well!
