In all honesty, I sort of need a break. I am working a absurd amount recently and Personally i think as though I need some down time. Since I work a full time job outside of this blog, I must say i only have enough time to create quality recipes within the weekends. That translates into me working on a regular basis. From Saturday morning to Sunday evening you’ll find me at Ambitious Kitchen HQ creating absurd messes which i never want to clean up.

Meet the Flourless Chocolate Chip Zucchini Oat Brownies.
So increds. Therefore amazing. Terms cannot explain this magic.
Ugh I usually say that, don’t I?
Okay but really… is it possible to believe that 1 brownie has ONLY 86 calories and 6g of glucose? YES, it’s accurate.
These are made with peanut butter, honey, applesauce, and zucchini, and guess what? The only thing you flavor is chocolate and a slight chewy texture in the oats. I’m quite impressed with myself.
Oh, oh, oh! These are totally gluten free of charge; and vegan in the event that you swap maple syrup for honey and use vegan chocolate chips.

1/4 glass honey or agave nectar
1/2 cup unsweetened organic applesauce
1 teaspoon vanilla
1 teaspoon cooking soda
1/2 cup dark chocolate chips (vegan if desired), divided
Preheat oven to 350 degrees F. Apply 8×11 baking skillet with nonstick cooking spray.
Place oats in blender or meals processor and process until finely surface. Don’t worry, it generally does not have to be ideal nonetheless it should take a few minutes. Set aside.
In a big bowl of electric powered mixer, cream together peanut butter, applesauce, honey and vanilla until even. Add zucchini, cocoa powder, ground oats, cooking soda, and salt; mix until well combined. Gently fold in 1/4 cup of chocolate chips. Pour batter into ready baking pan and sprinkle staying chocolate chips over the top. Bake for 25-30 a few minutes or until tooth pick placed into middle arrives almost clean.
Great brownies completely on wire rack after that trim into 20 squares. Enjoy!

Can I just state I totally know how you are feeling overall nonstop working factor? I’ve been blogging for approximately 8 months today and I love it nonetheless it eats up all of my free time within the weekend. It’s significantly exhausting but so hard to give up on! These turned on the subject of amazingly well but I made a few changes:
1) I added a 1/4C of additional sugar as the batter wasn’t very special.
2) I used homemade apple sauce (much less water than commercial).
3) I cooked them in muffin mugs to make them simpler to serve.
4) Sprinkled them with ‘pearl sugar’ to make them look nice.
EVERYONE (even the non vegans) enjoyed these. Extremely gooey/dark chocolates tasting. Really a great keeper. Unlike various other ‘no-fat’ desserts, that may haver horrible texture, this one really worked. Getting excited about trying it once again to see easily simply got lucky or it could be repeated…
We were holding divine!! I am an enormous enthusiast of marrying zucchini and chocolates!! I have a favorite recipe I have already been making for years- Spiced Belgian Chocolates Zucchini Bread which I might just replace with this recipe. This is an ideal match for my recent gluten-free & low sugars diet!! I suppose I could constantly add the cloves and cinnamon to give it that spiced kick, as well!
