Every week on Instagram I’m posting some fresh photo of muffins that I’ve baked. You’d believe I’m running some sort of bakery from my house but nope, only a huge fan of compact little flavor bombs for breakfast time.
And pigs Feet yes, I just referred to muffins as compact taste bombs”… Who the hell am I?
Do you know who I want I had been? Beyonce. After all did you men see her yesterday evening through the half-time present? What a goddess! Significantly, can someone simply show me how exactly to jump around with 6-inch heels and a microphone in some tiny outfit? These are skills they need to teach you in college. Probably I could practice the next time I make muffins? Yes, certainly… search for the Instagram pics.
Just kidding, I’ll adhere to the things I really do best for the present time. You understand like cooking muffins with new strawberries, sugary bananas, healthful oats, and a bit of chocolate chips? That’s just how my brain works.
In fact, I believe it might be one of the better combinations around. However whatever they put in my margaritas is also up top on my list. But margaritas and muffins aren’t quite the same so we’ll revert back to the main topic of cooked goods. I apologize, it’s Monday.
So you might be wondering what’s all in these small magical bites. Well besides strawberries, there’s whole wheat pastry flour for a lighter, healthy structure. alongside rolled oats, that assist bring an excellent chewiness and flavor that remind me of a bowl of oatmeal in the morning.
To make these muffins healthy, I didn’t use any kind of added sugar. Rather, ripe bananas and a smidge of honey sweeten up it up naturally. Oh and there’s only a tablespoon of olive oil as well for a bit of healthy fat, but I believe you could use less since greek yogurt can be used to include moistness.
The very best part? These are only 150 calories and also have almost 5 grams of protein! Plus that little chocolate you get with every bite is ideal; these muffins certainly make mornings a little bit brighter. I pass on mine dense with healthy almond butter, but I believe a drizzle of honey will be delightful aswell.
1 cup rolled oats
3/4 teaspoon cooking soda
1/2 teaspoon cooking powder
1/4 teaspoon salt
1 heaping glass mashed bananas (about 2 to 3 3 large very ripe bananas)
1 tablespoon essential olive oil
1 teaspoon vanilla
1/3 cup mini chocolate chips
2/3 cup diced strawberries
12 thin slices of strawberries (about 3-4 strawberries) for topping, if desired
Preheat oven to 350 levels F. Spray 12-cup muffin skillet with cooking squirt or collection the insides of the muffin tins with paper liners and squirt with cooking aerosol therefore the muffins do not stick to the liners.
In a large bowl, whisk together flour, oats, baking soda pop, baking powder, and sodium. Reserve 2 tablespoons from the oat-flour combination and toss with your diced strawberries. Set aside for afterwards.
In a large mixing bowl, combine mashed banana, olive oil, honey and vanilla. Add egg as well as the egg white and defeat until combined. Next add greek yogurt and almond milk and and beat on low until even in uniformity, about 1 minute. Add the banana mixture towards the flour combination and combine until moist – It is important to not over mix! Next gently fold within the diced strawberries and delicious chocolate chips into the batter having a solid wood spoon to consistently distribute.
Spoon the batter evenly into muffin cups. Place a thin strawberry slice on each muffin if desired.
Bake for 18-23 a few minutes or until a tester inserted into middle of the muffin arrives clean. The length of time will vary predicated on your oven. Once a tester inserted in to the muffin happens clean, great for 10 minutes in muffin tins on cable rack, after that remove from pan gently and awesome completely on wire rack. Muffins are perfect served a bit warm and spread with nut butter.
The muffins could be frozen. Once totally cool, simply individually wrap in plastic wrap and place in refrigerator. To reheat simply temperature in microwave. Muffins should be kept in refrigerator or freezing after two days.
