Dulce de Leche Pumpkin Mousse Pie with Pecan Gingersnap Crust

Did you know that baking to alleviate tension is called ‘stressbaking’? You can find it on Urbandictionary. It’s totally true and happens too much to me! Another great stress reliever is yoga. I actually visited a yoga sculpt class tonight. You need to do yoga exercise with weights within a warmed room with plenty of lunges, squats and sexy stomach moves. It had been perfect because I think I finally sweated out fifty percent the pie I ate the last week. Hehe.
Get over the pie and yoga, serious talk here. A lot of things possess happened lately. I started a fresh job and I am living out of my suitcase for the past month. This pie is my favorite. Pecans and Gingersnaps come together to make a beautiful spiced crust. Topped with Dulce de Leche… don’t act like you aren’t intrigued.

1/4 cup of melted butter
1 1/2 glass of gingersnaps, crumbled
1/3 cup all-purpose flour
For Pumpkin filling:
1/4 cup granulated sugar
1 cup powdered sugar
1 tablespoon of milk
3/4 tsp of ground nutmeg
3/4 tsp of ground ginger
3/4 tsp of ground cloves
1 jar store-bought Dulce de leche or caramel sauce (I found some at Investor Joe’s)
Preheat oven to 350 degrees F.
To help make the crust: Place gingersnap cookies and pecans in meals processor chip Pig feet And Lima Beans pulse until they become good crumbs. Add melted butter, darkish sugar, and ocean salt to meals processor chip with crumbs. Pulse again until the cookie crumbs resemble moist sand. Add flour and pulse a couple of times more until well mixed.
Scrape into 9-inch pie pan and use a spoon or fingers to press in to the pan. Garish with extra pecans or gingersnap cookies if preferred.
