Blue Corn Breakfast time Tacos with Scrambled Eggs, Smoked Salmon, Avocado + Dill

This recipe came about when I had a rigorous craving for smokey, salty salmon with warm, fluffy eggs; a combination frequently entirely on a typical restaurant’s brunch menu. So off I went to stalk Trader Joe’s where I produced about 17 different loops round the store just to drool over everything brand-new. If you store at Trader Joe’s, guess what happens I’m discussing.
I was thus excited when I came across these amazing blue corn tortillas! I am a lot more thrilled that I bought two packages so that I could make homemade blue corn tortilla chips for football video games I don’t even watch.
While I am not really a huge football fan, I am a fan of anything wrapped inside a taco that I can devour.
And devour these is exactly what I did.
The creamy smashed avocado pairs perfectly with fluffy scrambled eggs, salmon, and dill. I treasured it within the warm blue corn tortilla, and then time I might even put in a small goat cheese. But here’s the best part: this just takes about 10 minutes to throw together, it’s inexpensive, and you may eat it anytime.
Now… let’s eat!
1 teaspoon milk
1 teaspoon fresh lemon juice
4 oz. thinly chopped up smoked salmon
4 blue corn tortillas
sea salt and fresh surface black pepper
Place avocado in a medium bowl and mash having a fork, increase lemon juice and stir. Season to taste with salt and pepper and set aside.
In a large bowl, beat eggs and dairy. Next melt butter within a moderate skillet over medium-low heat. Add egg blend and prepare, stirring sometimes until large curds begin to form. When eggs appear barely set, remove from heat immediately. Period with sodium and pepper.
Warm your tortillas within the microwave or over a gas range on low high temperature so the sides become slightly golden dark brown and crispy.
Spread mashed avocado more than each blue corn tortilla. Spoon eggs over avocado and add salmon over the eggs, best each using a little bit of dill and add sodium and pepper to flavor.
These look delish! I would even have them for dinner.
You happen to be right about having a treat every once and while. I really believe everything in moderation is definitely A-OK. Particularly when it’s homemade and you also know precisely what’s going into the treat.
Treat every once in awhile is good…on the other hand, snow cream followed by a plate of buttery snacks (guilty as charged) isn’t. You see, for me, easily go too healthful, temptation just comes knocking.
Love the idea of salmon and eggs. Might try somewhat undercooking and then pack this one being a work lunch to reheat and make everyone within the lunchroom jealous!
