Banana Oat Protein Muffins zero flour or glucose added, 100 calories

September 23, 2020RecipesAlmond Flour Bread

Ahhhhh I live for the weekends, and this last one was simply so lovely and relaxing. I mean who doesn’t love laying in bed an extra half hour on Saturday mornings? Nowadays, it’s an extravagance.

Oh well. To more exciting items…

Bananas are my overall favourite! They pack potassium and digestible (good-for-you) carbs. Therefore, what will this mean? Well, they give your body energy and pretty much make you feel like a rock and roll star. But not the type of rock stars that do drugs.

In every seriousness, I love baking with bananas simply because they add moisture, act as a binder, and also have more than enough flavor where you don’t have to add additional sugar.

These banana muffins are my brand-new favorite snack for SO multiple reasons. They have simple ingredients, come out insanely moist and filled with flavor, Plus they pack some critical fiber and protein. Oh and something very last thing, they’re significantly less than 100 calories per muffin!

I want to point out a few crucial ingredients in these lovely muffins:

Oat bran: We decided that I wanted to make a muffin without the flour and knew that oat bran will be a fantastic option. I found some at Trader Joe’s near the cereal section, and it’s really now one of my favorite fake ‘flours’ to bake with. The dietary information is also wonderful!

Protein natural powder: Yes, I used protein natural powder in these muffins, but only a scoop! It certainly gives the muffins a little taste boost and in addition additional proteins. I encourage you to definitely try it out, because I do believe you’ll really enjoy it. I utilized 100 calorie vanilla protein natural powder, and my dietary information in the formula reflects that.

Bananas + Applesauce: We used two VERY ripe bananas for taste and a little bit of unsweetened applesauce rather than essential oil. YUM.

Greek Yogurt: Yes, more proteins! I used non-fat greek yogurt for additional protein also to keep the muffins moist. I’m a huge fan of Chobani, Liberte, and Fage brands for my cooking recipes.

Wait… what’s this? Sadly Nutella isn’t in the formula, BUT it’s totally lovely spread together with a warm muffin. (That’s why I held the inside of the muffins so healthful. HA.)

A teaspoon of Nutella has about 33 calorie consumption. And actually, a teaspoon on these is usually all you need for just some indulgence! Or if you’d like you can even add in chocolate potato chips, berries, or nuts!

One last thing: these are perfect for freezing; to reheat basically microwave for one minute! Enjoy!

In a moderate bowl whisk jointly oat bran, proteins powder, baking natural powder and cinnamon; reserve.

In a big bowl, mix mashed banana, applesauce, greek yogurt, egg whites, and vanilla jointly until well combined and clean. Add wet substances to dry elements and blend until just combined. Let batter sit down two mins to thicken a bit. Divide batter evenly into 12 muffin mugs and bake quarter-hour or until toothpick inserted into center happens clean. Transfer to a wire rack to awesome for ten minutes, after that remove muffins from tin and put on wire rack to great completely.

Muffins are ideal served warm with your favorite spread. Feel free to add in chocolate potato chips, berries, or nuts towards the batter!

Omg I must try this! Coconut flour can be a great choice for healthy cooking but can be a small tricky to work with.

Okay We made a wholesome homemade ‘Nutella’ and experience it would be criminal never to share, it was very easy and I actually enjoy it better than the real thing!!

Blend 1 C roasted, cooled then peeled hazelnuts with 1-2 T macadamia oil (or another healthy oi, and not absolutely necessary) until it reaches a butter persistence then increase 1.5 T cocoa and 2-3 T pure maple syrup (or another sweetener) mix and carried out! I am hoping you give it a try I think you’ll love it, specifically on these muffins!

Is there an alternative for the apple sauce?

I simply found your site and am overwhelmed and exactly how amazing everything sounds, I really can’t wait to try my hand at a few of these this weekend!

Is there anything I could use rather than apple sauce?

Nina

I simply cooked them (there are still warm) and they’re so delicious!

I replaced the two 2 white eggs with 1 whole egg + 1/2 cup more of applesauce

I replaced the yogourth with vanilla soja milk

We used 1/3 glass of chocolate protein (Impact Diet plan Whey from #myprotein)

This is an AWESOME light muffin recipe !
