Ahhhhhhhh! I am so completely active lately.
Today I competed in a Chinese take-out cook-off. It was amazing to see the turn out and every one of the creative dishes.
We were necessary to produce 250 samples. I know… that is clearly a lot of freakin’ examples! I spent my Sunday night chopping, dicing, and hearing Bon Iver. I was totally in the zone. There is something about the mix of music and meals that leaves me feeling completely content. After all, I REALLY LIKE creating dishes more than anything in the world. Music music out everything else. I end up being happiest in my own brain thinking about flavor combinations.
Here is a sneak look: Each morning I wake up and dig through my cupboards. The other day I came across coconut. I got super excited. Up coming there were raspberries and coconut milk within the fridge. You know what I developed? Toasted coconut oatmeal with raspberry coconut dairy & almonds. Which was my breakfast time. Same thing occurs at lunch and dinner. I can’t help but just throw the things I find jointly and somehow allow it to be delicious.
I suppose it could have been really helpful to have figured all this out four years back, but that isn’t how life functions. Life enables you to work with what you want. It surprises you! And I’m okay with that, as long as I can maintain eating stuff that pop into my mind, then share them with you. Cool?
For the contest I ended up making ginger-garlic chinese chicken lettuce wraps with sweet mango salsa. I had been sure these were going to earn. Significantly who doesn’t like MANGO & CHINESE CHICKEN? That mixture makes tastebuds dance with joy. I guarantee it’s true.
Even though my dish didn’t win, I’m actually incredibly happy I competed. Get together others using the same enthusiasm for food makes me feel like I might be actually regular. Because I’ve a unusual feeling that watching the Food Network and food shopping all the time isn’t? I dunno… I’m simply doing my matter.
Right now I can tell you a very important factor. All I wish to do is unwind and eat a big huge bell pepper filled with goodness and dripping in enchilada sauce. Guess what happens I don’t wish to accomplish? Pack up my all of my possessions. I believe I failed to mention that I’m departing Washington DC!
Life is totally bonkers right right now… in a good way! SO MUCH is going on. Hopefully I will have some exciting news to share soon. But probably we should talk about this another period? My suitcases are waiting around to become packed and I could tell you wish discuss these bell peppers which are stuffed towards the brink.
Just look at these. One of my favorite factors I’ve made in a while. I swear all it takes is normally one bite and you’re in a world full of deliciousness. Which was a serious statement incidentally.
By now you should know that I don’t joke about when it comes to mexican flavors.

In my world they are a dream become a reality. They’re savory, healthy, roasted, and basically just FREAKIN’ AMAZING. Merging rooster & quinoa with enchilada sauce and then stuffing it inside a pepper is probably one of the better decisions I’ve ever made.
Please can get on this level with me. Significantly… somebody needs to.
Enchilada Chicken & Quinoa Stuffed Bell Peppers
3 bell peppers, cut in half and seeded
1 cup prepared quinoa
1/2 cup cilantro, plus much more for garnish
1/2 onion, diced
1/2 teaspoon black pepper
1/2 cup crimson enchilada sauce, plus much more for topping (I typically use 1 can)
1/2 cup reduced fat cheese of your choice (I like colby jack)
Preheat oven to 375 levels F. In a big bowl combine chicken, quinoa, egg whites, onion, cilantro, garlic powder, cumin, sodium, pepper, and enchilada sauce. Blend well.
Stuff each pepper fifty percent with the blend. Top pepper with 1 tablespoon of enchilada sauce and 1 tablespoon of parmesan cheese. Bake for 45 a few minutes.

one query…i reside in Vancouver, Uk Columbia…anyone find out where I could find enchilada sauce? Don’t know that I’ve seen that throughout the grocery store…
