A wholesome sesame poultry stir fry with vegetables and an unbelievable coconut-ginger brown rice! You are going to love this easy meal!
So you probably understand by now that traveling is among my favorite things to do. Isn’t it amazing how traveling the planet can open up your eye to new feelings, people, and items that you’d by no means thought you’d perform or see? Every time I move somewhere brand-new, I’m learning something about myself. And think where I’m going next? Australia!
My sweetheart and We are leaving in less than 14 days; we’re beyond thrilled to explore beautiful beaches, browse, snorkel, unwind, hike, and eat amazing food.
I do feel just like I’m off to a good start though; my workouts are consistent and I am consuming well. I’m really into clean feeding on lately (minimal processed food items). Since I REALLY LIKE Mexican and Asian tastes, I’ve been taking pleasure in a whole lot of vegetarian taco salads and veggie packed meals such as this chicken sesame stir fry!
AND THIS Mix FRY = ALL OF THE HEALTHY DELICIOUSNESS PACKED WITHIN A SKILLET.
I love this recipe because it’s not only easy, but it’s actually pretty healthy. Simply chicken, spices, veggies all in a skillet. The ginger coconut grain is definitely amazing and the cashews put in a delightful crunch.
Stir-frys are fantastic because it is possible to totally make sure they are your own – add pineapple, orange zest, your favorite veggies, as well as extra spices. Not love when dishes are versatile?
Anyway I problem you to whip this up. Serve it to your friends or loved ones. Just do not forget to save some for tomorrow’s lunch… wrapped within a burrito, maybe?

Sesame Chicken Stir-Fry with Coconut-Ginger Brown Rice + Crushed Cashews
1 cup reduced-sodium chicken broth
1 cup vanilla coconut milk (I used So Great tasting Sugar-Free – but any will continue to work)
2 teaspoons freshly grated ginger
1 cup uncooked jasmine rice (I used Dark brown Jasmine Rice bought at Trader Joe’s)
2 tablespoons sweetened coconut flakes
¼ glass cashews, crushed
2 tablespoons packed darkish sugar
2 tablespoons gluten free of charge soy sauce
1 tablespoon fish sauce
1 tablespoon rice vinegar
1 teaspoons dark sesame oil
3/4 teaspoon cornstarch
2 teaspoons coconut or essential olive oil, divided
1 pound Just BARE Poultry Breasts, cut into chunks or bite measured pieces
2 cloves garlic clove, minced
1 tablespoon sesame seeds
In a medium saucepan, provide coconut milk, chicken broth, and ginger to a boil. Once in a boil, add rice, cover and decrease temperature to low. Make as aimed on grain package deal or until grain is light and fluffy; mine often takes 30 minutes roughly. Once done cooking food stir in coconut flakes and smashed cashews.
While the grain is cooking, you can prepare the chicken stir-fry: Inside a moderate bowl, stir together brown sugar, soy sauce, seafood sauce, chili sauce (sriracha), sesame oil, and cornstarch; reserve.
Heat a wok or skillet over medium high heat. Add in 1 teaspoon of the coconut or olive oil. Once oil is popular and shimmering, add poultry and cook until performed – about 4-5 a few minutes. Remember to mix the chicken once in awhile while cooking. Take away the chicken from the pan and place on a dish for later.
Add in another teaspoon of coconut or essential olive oil to the pan and add in garlic, snap peas, bell pepper, and broccoli; make for 4-6 a few minutes or until vegetables are preferred consistency. Next add brown sugars- soy sauce blend to the vegetables and stir until the sauce thickens up a bit – about a minute or two. Finally add chicken and toss altogether to coat chicken. Sprinkle with sesame seeds. Divide consistently into 4 bowls – top with green onions if desired.
This meal could be gluten free, just be sure to purchase all gluten free items like soy sauce, chicken broth, etc.
Feel free to use any coconut dairy. I find that the vanilla coconut milk adds a good sweetness to the grain. I buy Sugar Free of charge Vanilla Coconut Dairy from Whole Foods, but any coconut dairy should work. You can even use the light canned coconut milk; however, I wouldn’t recommend full fat if you are trying to view your caloric intake.
