My boyfriend and I are leaving in less than 2 weeks; we’re beyond excited to explore gorgeous beaches, surf, snorkel, rest, hike, and consume amazing food.
I do feel just like I’m off to a good start though; my workouts are constant and I’ve been consuming well. I’m actually into clean eating lately (minimal processed food items). Since I REALLY LIKE Mexican and Asian flavors, I’ve been taking pleasure in a lot of vegetarian taco salads and veggie loaded meals such as this chicken sesame mix fry!

Sesame Poultry Stir-Fry with Coconut-Ginger Brown Rice + Crushed Cashews
1 cup reduced-sodium chicken breast broth
1 cup vanilla coconut milk (I utilized So Delicious Sugar-Free – but any will continue to work)
2 teaspoons freshly grated ginger
1 cup uncooked jasmine rice (I used Dark brown Jasmine Rice bought at Trader Joe’s)
2 tablespoons sweetened coconut flakes
¼ glass cashews, crushed
2 tablespoons packed dark brown sugar
2 tablespoons gluten free soy sauce
1 tablespoon fish sauce
1 tablespoon grain vinegar
1 teaspoons dark sesame oil
3/4 teaspoon cornstarch
2 teaspoons coconut or olive oil, divided
1 pound Just BARE Poultry Breasts, trim into chunks or bite sized pieces
2 cloves garlic clove, minced
1 tablespoon sesame seeds
In a moderate saucepan, provide coconut milk, rooster broth, and ginger to some boil. Once in a boil, add rice, cover and decrease temperature to low. Make as aimed on rice bundle or until rice is certainly light and fluffy; mine often takes 30 minutes roughly. Once done cooking food stir in coconut flakes and smashed cashews.
While the rice is cooking, it is possible to prepare the poultry stir-fry: Inside a medium bowl, stir collectively brown glucose, soy sauce, fish sauce, chili sauce (sriracha), sesame oil, and cornstarch; set aside.
Heat a wok or skillet over medium high heat. Add in 1 teaspoon of the coconut or essential olive oil. Once oil is warm and shimmering, add chicken and make until carried out – about 4-5 a few minutes. Remember to stir the chicken every so often while cooking. Take away the chicken from the pan and place on a dish for later.
Add in another teaspoon of coconut or olive oil towards the skillet and add in garlic, snap peas, bell pepper, and broccoli; cook for 4-6 mins or until vegetables are preferred consistency. Next add in brown sugars- soy sauce mix towards the veggies and stir until the sauce thickens up a little – in regards to a minute or two. Finally add chicken and toss altogether to coat chicken. Sprinkle with sesame seeds. Divide evenly into 4 bowls – best with green onions if desired.
This meal could be gluten free, just make sure to purchase all gluten free stuff like soy sauce, chicken broth, etc.
Feel free to use any coconut dairy. I discover that the vanilla coconut dairy adds a nice sweetness towards the rice. I buy Sugar Free Vanilla Coconut Dairy from Whole Foods, but any coconut dairy should work. You can even use the light canned coconut dairy; however, I wouldn’t suggest full fat if you are trying to watch your calorie consumption.
And this mix fry looks amazing, especially that coconut-ginger brown rice!

Have a blast in Australia! Can’t wait around to see pics, I’ve noticed its incredible!
